Protein Bar Recipe?
Anyone made a good protein bar?
I really would love to start making a good homemade one for summer road trips. Wondered if anyone has any experience with a good recipe? |
I started with Mark Sisson's Primal Energy Bar recipes and have tweaked them just a little:
- I find adding two extra egg whites per batch helps keep them moist and held together better. It also adds more protein, since I use flax meal instead of protein powder. - I use a long glass loaf pan instead of a square one, grease it with coconut oil, and pack the batter in about 2 inches thick. I still only bake it at 325F for about 10 minutes before sprinkling the remaining coconut on top and pressing it down firmly into the soft surface, then bake about 10-15 more minutes. The thicker bars also helps keep them moist, especially if you store them in the fridge or freezer for long periods. - I don't add any honey, and just rely on the fruit for sweetness. Adding honey would also help bind them together. |
Have you tried these? If you want them higher in protein, you might be able to add a little whey protein. :)

You might need to adjust them. In addition, if the "dough" seems too dry--try kneading it first and then add a tiny bit of syrup only if it's still too dry--use only a few drops at a time as this could become mushy if you add too much syrup. (You said you wanted these for road trips--it would be advisable to keep them in the cooler as I think these would require refrigeration.) |
I make these for my body building son, (affectionately known as "Protein Boy") and he and his friends love them.
Peanut Butter Protein Bars ¼ cup butter ½ cup peanut butter (pref chunky) at room temperature 4oz cream cheese, softened 1 ¾ cups vanilla flavored whey protein powder 1 Tablespoon vanilla 2 tablespoons Splenda ½ cup chopped peanuts 1. Melt the butter (a microwave works well for this), and add the peanut butter and softened cream cheese to it. Mix together with a spoon (no need to drag out a blender or mixer), and then add the protein powder, vanilla, Splenda and peanuts; stir well. (It will be very crumbly) 2. Taste and see if it is sweet enough. If not, add a little more Splenda. 3. Press the mixture firmly into an 8x8 inch pan. Slice into 12 pieces and put the whole pan in the freezer. Remove when the bars are firm. Yield: 12 bars, each with 9 grams of carb, 1 gram of fiber, for a total of 8 grams of usable carbs and 31 grams of protein. *For storage, it’s a good idea to package these in individual zipper –lock bags in the freezer. |

I really want to make these....but have no nuts! Is there anything else I could add instead? Would they still taste good?

I think nuts are an option not necessarily a required ingredient!! Maybe some coconut flakes? What do you have on hand that would be a great sub?

made them last night for hubby! They were great! I didn't have an 8x8 pan though so I had to eye ball in a bigger pan. We will be making these again for sure!!!! delicious!

Hmm, sounds nice too, Beeb. Linda said they were not sweet enough, so using some powdered erythritol instead of the Splenda or maybe use Splenda packets which pack more of a sweet punch, should do the trick. Linda's web site is amazing!! I love that she rates recipes and writes about them below. That's really helpful for people trying to decide whether to make a particular recipe or not.

Just made my second batch of Jennifer Eloff's Coconut Chocolate Protein Squares and I truly just LOVE them. They have become an important part of my daily life very quickly!
While I start work at 8am, I have been getting up at 5:20am every morning to get to the gym by 6:30 so that I can work out for an hour or more. I am not a morning person. I also hate going to the gym. I hope y'all can appreciate what a huge feat this is for me! I dare not get up earlier to make time for breakfast, so I shake up a protein drink (whey protein powder+almond milk) and GET OUT OF THE HOUSE before I convince myself I can get back in bed and sleep for another 1½ hours. After working out, I indulge in 2 of Jennifer's Protein bars for my REAL breakfast. It's important for me to eat before work because my job is physically demanding and I'm on my feet all day and working up a sweat there, too. For starters - it feels like I'm eating dessert for breakfast, and there's no denying that puts me in a great mood :p But they are FILLING and satisfying and I don't find myself thinking about food again for hours and hours. They are easy to make, easy to tweak and the carb count can't be beat when it comes to something this flavourfull and satisfying. |

I am going to try these,Gnossienne, based on your recommendation. I will try to make them nondairy, so I don't know exactly what tweaks I will come up with. However, like Jen, I love coconut and chocolate together.

I made these last night but haven't tasted one. A few things I noticed. After pressing them down in my 8X8 pyrex, I had a hard time cutting them. I elected to just put it in the freezer and I'll try to cut them when I pull them out. I have no idea if that will work, but I guess I'll find out. By the amount it made, I don't know if I'm going to get 12 bars out of it unless they are very filling. I didn't use nuts, so maybe if I had it would have made them seem bigger.
