Skirt Steak - What is it?
I've seen "skirt steak" as an ingredient in some recipes and have never heard of that cut. Is it interchangeable? Can I use london broil or sirloin in place of it? Sorry for my ignorance!

I saw on the food network the other day and they said it is actually the diaphram of the cow.

These are long muscles that flank the sides of the cow.
They are very versatile and flavorful, actually. You don't serve them as steak, but they are great as a 'cut up' beef ingredient in fajitas, salads, asian... whatever. Anywhere you want a good, deep, beefy flavor and you are adding a lot of seasoning and preparation so that the thin strips are the right texture. I have made fajitas and several mexican dishes and beef with broccoli (asian) as well. Don't be afraid!! They are inexpensive and delish! |
