What to do with all the leftover ham...????

I have alot of leftover smoked ham. What can I do with it?? A nice casserole,maybe?? ANY recipes will be greatly appreciated. Thank`s

WOE: UDDDD for health primarily, secondly for wt loss
Whir it up in a food processor, add mayo, sf relish, teeny bit of onion and you have ham salad

Fry it up for breakfast with your eggs

Freeze it in individual size portions for later use ( this is what I am going to do)

Make soup with the hambone

This is what I do too! I froze portions of the ham to make ham salad in a few weeks. I make soup from the ham bone too!

Ham and Egg Bake

2 Tbsp butter
¼ cup chopped onion
¼ cup chopped green pepper
3 Tbsp flour
1 can chicken with rice soup
1 cup milk
2 hard boiled eggs, chopped
2 cups cooked ham, cubed
1 pkg refrigerated buttermilk biscuits

Melt butter in pan and cook onion and pepper until soft. Stir in flour. Mix well. Add soup & milk. Cook, stirring constantly until thickened and bubbly. Stir in ham and eggs. Cook until bubbly. Pour into baking dish. Top with biscuits. Bake 10-15 minutes or until biscuits are golden at 350°

I vote for the ham salad also. I am eating a ham salad sandwich for lunch today on a bun made with my pita recipe.

I love making George Stella's "mac" and cheese casserole and adding a few cups of cubed ham to it. Yum!

This recipe is really good and I thought that adding some diced or shredded ham would be really good.

Southwestern Breakfast Squares

10 eggs
4 TBS cream
1 (4oz) can diced green chilies
2 TBS salsa
1/4 tsp salt
1/2 cup green or red bell pepper, diced
1 TBS onion, diced
1/2 cup Monterey Jack cheese, shredded ~ divided
1/2 cup Cheddar cheese, shredded ~ divided

Preheat oven to 350*

Beat eggs and cream. Add all ingredients except 1/2 of each cheese. Blend well. Pour into an 8x8 buttered non metal baking dish. Sprinkle with remaining cheese and bake for 40 minutes.

I make these from time to time. They are great as appetizers or for meals.

Nancy Moshier's Ham and Spinach Drops
1 T butter
1/4 cup finely chopped onion
8 oz cream cheese
10 oz frozen spinach, squeezed dry
1 egg
1/2 c grated parmesan
1 cup finely chopped ham
salt to taste-optional
pepper

Soften onions in butter. Add all other ingredients. Mix well. Drop on silicone lined sheet or sprayed cookie sheet. I make mine walnut-sized. Bake 20 minutes until bottoms are slightly browned.

I just found another recipe in my "to try" pile for ham & asparagus fritatta that I may try tonight....I think I will use broccoli in place of the asparagus since I have that on hand.

Not really a recipe but I cut the ham into bite sized pieced and saute it with some quartered fresh mushrooms and drained canned green beans until everything is cooked, then I add some half and half (not a bunch) and a handfull of shredded mild cheddar cheese, salt and pepper and stir until it's all melted and thickened
