Craving Coconut Cream Pie
I have searched all over looking for a great LC version. Didn't have any luck so going to go drink some hot tea and go to bed and read.
Does anyone have anything that will help curb this craving? My DH offered to go buy me a pie at Perkins What was he thinking? |

This is Taterhead's recipe (thanks Taterhead
) for lemon pie filling. I've been using it for years and think it's wonderful - virtually indistinguishable from the high carb version. I've also made coconut pie by leaving out the lemon juice and zest and adding coconut plus sprinkling coconut on top of the meringue and I've made chocolate meringue pie, again leaving out the lemon and adding cocoa. There are many versions of crusts available some using nuts and some using low-carb flours. You can do a search and find which one appeals to you. If I'm making this just for DH and me I don't even bother with crust - cuts the carbs and calories.Lemon Meringue Pie 6 egg yokes 1 packet unflavored gelatin 1-cup water 1-cup Sugar subs 1/2 cup heavy cream 1 tbsp butter 1/3 cup lemon juice 2 teaspoons lemon zest ( must have) 1/4 tsp salt In a large sauce pan blend all ingredients until smooth using wire whisk, then turn on the heat. Cook over low heat, stirring constantly until slightly thickened. Remove from heat and allow to cool slightly. Refrigerate for 1 hour or until set. Meanwhile cook your crust and allow to cool. Whip up the 6 egg whites until soft peaks form. Sprinkle with 1 tsp cream of tartar and 1/4 cup Sugar Subs, continue whipping until stiff peaks form. Pour filling into cooled crust, top with meringue and bake until light brown (400*). Put in refrigerator over night. DO NOT cut this until very very very cold, because you'll have lemon soup. |

I made the blender pie tonight in a mixer with a whisk. I followed the directions but to keep it non-dairy I used coconut milk instead of heavy cream. I am not going to try it until it chills over night but if it tastes anywhere near as good as it smells then I'll be a happy camper....lol
oh yea. I made it in a 9 x 9 pyrex dish. |

ok, I tried this the first thing this morning. Although it had a good taste, it was not what I expected. This is not the cream pie I thought it was going to be but rather a custard. If you like custards you should like this. Don't get me wrong, there is nothing wrong with custards, it's just not one of my favorites.

This looks yummy! This recipe looks so easy, and uses "normal" ingredients....I'm going to give this a try. We went to Old Country Buffet the other night and my hubby had a slice of coconut cream pie and ever since then I have wanted some big time...hopefully this will feed the need
