Dunno the answer to your question, but there's a Healthy Wrap/Tortilla recipe at the Pitter-Patter of Losing Pounds blog, and OH! Our Lauren has a recipe on her blog - did you see it? Hers uses oat flour in a very small amount, and for which I am likely to substitute something (dunno what yet, but maybe oat bran?) when I try them today.
I am leaving out links so as not to get hand-swatted, but I think I left you enough clues to Google the information you are looking for, if you haven't already Also, in looking at Lauren's blog, there is a link there to an Aussie forum which has another recipe that looks interesting (but the final product looks a little thicker than a normal tortilla). Just reading the comments on Lauren's blog for these wraps brings forth a lot of interesting possibilities (pizza crust, anyone?). Following up with previous post: I made Lauren's recipe - I was expecting the tortillas to be fairly bland and flavorless - you know, like regular tortillas - boy was I surprised. For the spices, I added a bit of Mrs. Dash, but I honestly think it was the vinegar that made the difference. Very fragrant and delicious-smelling while they were cooking - even before I put them in the oven, they smelled good.
The only thing I changed was that I needed quite a bit more flaxmeal to get the tortillas dry enough to roll out, even between sheets of plastic wrap, and I did use oat bran instead of oat flour because I had it, and didn't want to whiz up any oat flour. But the 8 minutes of cooking was just about right. I just now tasted these and they are very good by themselves - perhaps could have used a bit more salt, but I believe that when I put cheese/whatever on them, they will be just perfect to use for quesadillas, and although I am not as pizza-obsessed as some, I do think they'll be excellent for personal pizzas. Lauren, this was definitely a winner recipe, but next time I think I'll make a WAY bigger batch. Last edited by gharkness; 03-29-2009 at 10:00 AM.. |
