After trying the green bean fries....
....(and loving them!) I decided to try and recreate a favorite served at a local restaurant here (shout out to Danny's Bistro!) Flash Fried Spinach. They make it in a deep fryer, and after frying, sprinkle with grated parmesan cheese and a squeeze of fresh lemon juice.
I did my baby spinach leaves just like the green beans. I put some in a bag with a little olive oil and shook them until they were all lightly coated. Then dumped them onto a paper plate and microwaved them til they were crunchy. Gave them a quick sprinkle of salt and grated some parmesan cheese over them, and hit them with just a sprinkle of lemon juice. Oh my gosh, it tasted just like the Flash Fried Spinach from Danny's! If someone hasn't already suggested this recipe, you might want to try it!

yum, sounds good! I really like to stir fry fresh spincah and just made the green beans a few days ago. I had thought about deep frying spinach...

spinach, and I love crunch, so this could be a winner for me.So, no deep frying required?? Just the microwaving, huh?? I have half a bag of baby spinach on hand, so I'll be trying these today ![]() |
