New Twist to LC Pizza...
brush dough with virgin olive oil prior to baking!!!!!!!!!!!!!!

Inspired by Kevin, Gary, NancyElle and others:
A six to eight inch individual LC pizza crust (depending upon how thin you prefer your crust): Slightly less than 1/4 cup almond flour (Bob's Red Mill blanched recommend), fill to 1/4 cup with a dash of coconut flour (also Bob's). 1/2 cup part-skim mozzarella 1/4 cup mild cheddar 1 or 2 eggs Combine and spread on on parchment paper paper sprayed with a a nonstick spray (I use an organic, olive oil nonstick spray). [B]BRUSH DOUGH WITH VIRGIN OLIVE OIL PRIOR TO BAKING![/B Bake crust at 350 or 375 for 20 minutes. Remove and add sauce and toppings. Back in oven until baked to your desire. I made your pizza!
Hi Zizzi - thought I'd let you know we had your pizza for lunch with a salad and my homemade Ranch dressing. (I prefer low-sodium dressings that I make at home)
I doubled the recipe and used 4 large egg whites. Used nonstick cooking spray on foil (was not the greatest idea, but I did peel it off after baking the crust) and spread over a cookie sheet. Using plastic wrap over the dough, I rolled it out smoothly. Baked for 20 minutes, topped with my pizza sauce, cooked chicken and bacon and Monterey Jack cheese and baked it again for about 10 to 15 min. My eldest son didn't know it was grain free until we told him after he was half-way through his lunch. Well done! ![]() |

zizi, you're right!!! This is the best pizza crust I've made so far. I also doubled the recipe, patted it out on a jelly roll pan that I used the parchment on. I added the seasonings to the dough while I was mixing it, then sprayed the parchment the way you said to do and sprayed the top of the crust also. It puffed up like a regular pizza crust and looked so pretty. I added the pizza sauce and toppings I already had cooked and in the freezer, added cheese on top of that and threw it back in the oven. We can usually eat the whole pizza between us, but I couldn't finish half. I had 3 pcs and had to quit.

I don't know, it won't last long enough to find out. Do like Linda Sue did with hers and leave it uncovered in the fridge to dry out. She said that helped hers. Of course, different recipe, but it wouldn't hurt to try.

Your variation does sound wonderful ZiZi. The darling Charski tweaked the crust like this for a lovely version:
3 jumbo eggs 12 oz. bag of Trader Joe's 3 cheese blend (mozzarella, jack, cheddar) (measured out was exactly 3 cups) 1 tsp. garlic powder 1 tsp. crushed dried basil 2 tblsp. [COLOR=#016798]flax meal[/COLOR] 1 scoop [COLOR=#016798]Designer Whey[/COLOR] [COLOR=#016798]unflavored protein powder[/COLOR] There have been so many great versions! |

I made another one for lunch again today, zizi, and hubby and I loved it!! I really like the fact it has less cheese in it than others, since cheese tends to stall me and it just mixes and pats out so easily. The coconut flour really soaks up those eggs too.

Wow this sounds awesome. I just wish the stores around here carried coconut flour and almond flour. Bobs Red Mill is in every store, but not either of these. I can only find almond meal.

Neecy, almond meal and almond flour are pretty much the same thing and you can make your own by taking almonds and grinding them yourself. You can get the coconut flour at Netrition or most health food stores.
I am also thinking of taking this crust and making bread/buns out of it for hubby. He has diabetes and can't have regular bread. This is more bread like than oopsie rolls and doesn't have as much cheese in it as other crusts, so thinking it might work. |

Ok, finally got around to making the "bread" for hubby out of the low carb pizza crust. I doubled the recipe, but only used 3 eggs instead of 4. That was a mistake, I feel. Next time I make it, I will use 4 eggs. I left off any seasonings, just threw the ingredients together and sprayed the olive oil and baked. The texture is not great for bread, but the flavor was wonderful. You could tell it had the coconut flour in it because it was dry but I'm thinking the extra egg would fix that. I had trouble putting it down and had a ham sandwich with it since we had leftover ham in the fridge. Hubby enjoyed it also. It's a little brittle, but the extra egg might fix that also. The flavor was divine. You might give this a try and see if you can handle the texture or not. It's not a problem for us.

Oh thank you thank you thank you! My daughter was pouting just yesterday because the drug reps brought pizza for lunch at her office. I was going to make that kind with all the cheese but honestly it's just too much cheese. But I actually HAVE almond and coconut flour all at one time so we're good to go! Maybe I'll surprise her tomorrow night for dinner.
