Help! Homemade sausage

There was a post with lots of pictures. Not sure if there was a recipe in there, but I'm getting ready to do some tomorrow and could use any tips and/or recipes. I did a search and still can't find it.
I have a grinder that goes on my Kitchenaide. Never used. Neighbor has the pig and the casing. We are going in this blindly together!

Barb,
I make my own sausage from store bought ground pork. This recipe is not too spicy which I personally like.

Breakfast Sausage

5 lbs. ground pork
2 T. salt (I use only 1 T.)
2 teas. white pepper
1 T. rubbed sage
1/2 teas. grounded ginger
2 teas. nutmeg
2 teas. thyme
1 c. ice water
Mix well.

What is the reason for the ice water? I have been wanting to spice up ground pork myself, I just don't know what to put in it.

To be perfectly honest, I don't know. I just follow the recipe. However, it could help in distributing the seasoning throughout the meat.

Just a wild guess but maybe the cold water helps keep the pork fat in a more solid form. Otherwise it would begin to melt as you worked in the seasonings.
