Spicy Chipotle Sweet Potatoes
This is an adaptation of a Bobby Flay recipe. We loved it!
Char's Spicy Chipotle Sweet Potatoes 2 sweet potatoes, peeled and thinly sliced (about 24 ounces, more or less) 1 1/4 cups heavy cream 1 1/2 teaspoons Tabasco Chipotle hot sauce 1/4 teaspoon chipotle chile powder (optional) Salt and Pepper Little bit of butter Preheat over to 375*. Butter the bottom of a small casserole dish - I used an oval about 8" long by 6" wide. Mix together the cream, Tabasco Chipotle and the chipotle powder, if using. Put about 2 tablespoons in the bottom of the prepared casserole, shake it around to evenly coat the bottom. Put in a layer of the sweet potato slices; spoon on some more sauce and smear it around to coat the potatoes. Grind on a little fresh pepper and some sea salt. Repeat layers. Don't oversalt! Just a little sprinkle on each layer is fine. Pour remaining cream over all, making sure the top potato slices are well-covered. Cover dish with foil and bake at 375* 30 minutes. Uncover, push the potatoes down into the liquid, and let roast another 15 to 20 minutes, or til tender. Let cool 10 minutes before serving. We had this with our rotisseried prime rib last night, and a big salad. It's rich so I still have half the casserole left - so I'd say it makes 4 servings as a side dish. Obviously not for induction, but if sweet potatoes are part of your eating plan - this is excellent stuff!

Yum! DH has been bugging for a tater fix and this sounds right up our alley!
Do you think I could use a couple spoon fulls of the adobo sauce from the canned chipotles in leiu of the hot sauce/powder? Thats what I have on hand at home so maybe I will just give it a whirl. Thanks! Its like chipotle scalloped taters! Did you use a mandolin? |

Hi Andi! Yes, I did use a mandoline. It makes things SO much easier!
Actually one of the recipes I saw called for pureed chipotle and adobo sauce so that should work perfectly. I just didn't want to open a whole can of them for this one little bit so used the Tabasco, since I ALWAYS have that on hand! Now that I know how much we liked it - may go with pureed canned next time just to see how it changes the recipe. Yep, chipotle scalloped sweet taters - YUMMO. |
