Salmon Salad
Anyone got any good recipes for salmon salad. I bought several cans at Costsco last week and took one for lunch to just eat out of the can. It was very mild and would definitely lend itself to a salad of some sort. It really needed something; I have never had canned salmon that was so mild. Any suggestions?

I love Costco canned salmon. I usually just mix it with mayo and eat. But I have been thinking about salmon patties lately. I don't have a good recipe for the patties yet.

Canned salmon can be a little strong for salad if you're only accustomed to tuna, but I've found most people like patties the first time they try them. You can pretty much treat it like tuna for salad recipes -- basic mayo, mustard, celery, onion, that sort of thing. Add a hard boiled egg for cold salad, or a raw egg to turn it into patties for frying or broiling. Garlic and ginger make a wonderful addition separately or together, especially if they're fresh grated. I like a little lemon juice as well.

Thanks for the replies. I think I'll experiement a little. I love tuna salad. Like I said, this is the mildest canned salmon I have ever tasted. It was sold in a 5 can pack and right now I can't remember the name, but I will definitely buy it again.

I also would be interested in a recipe for salmon salad. But meanwhile, here's one for salmon patties that I think is great.
SALMON PATTIES 1 can (7 ½ oz) pink salmon, drained ¼ cup finely diced onion ¼ cup finely diced celery ½ teaspoon dried tarragon salt and pepper to taste ¼ cup mayonnaise 2 teaspoons Dijon mustard 1 egg, lightly beaten 6 tablespoons mixture of parmesan cheese and crushed pork rinds 4 tablespoons mixture of parmesan cheese and crushed pork rinds 1 tablespoon oil 1 tablespoon butter Carefully flake the salmon into a bowl. Add the onion, celery, tarragon, salt and pepper; fold together with a rubber spatula. Combine the mayonnaise and mustard, then mix into the salmon. With a rubber spatula, fold in the egg (just enough to get it to the right consistency) and cheese/pork rind mixture. Form the mixture into 4-5 patties and coat with the remaining cheese/pork rind mixture. Refrigerate, loosely covered for at least 1 hour. Heat the oil and butter in a nonstick skillet. Cook over medium heat until golden, about 3-4 minutes per side, adding more oil and butter if necessary. Serve with tartar sauce. |

I mix canned salmon with chopped onion, chopped celery, and then mix it with cream cheese and a small amount of sour cream to think a bit. Serve on crackers, very tasty.
