I had a recipe years ago for oven fried chicken. You melted a stick of butter in your baking pan in the oven at 350, put the cut-up, seasoned chicken in skin side down, bake covered for about 30 minutes then turn the chicken skin side up and bake uncovered another 30 minutes or til done. I seem to remember it came out with crispy skin. You could probably use less butter or substitute oil.
Oh, and paprika was sprinkled on it help with the browning |

I crush porkrinds and add parm cheese, a little powdered ranch dressing, garlic powder or any seasoning you would like. roll the chicken in and put skin side up and drizzle with a little melted butter, it gets good and crispy, i always make it this way.

A roommate taught me this recipe yaers ago and it works.
Heat oven to 325 and use a cast iron frying pan , spray with cooking spray. Sprinkle your chicken breasts with favorite spices( I usually just use salt and pepper) and bake for 1 hour. You will be surprised at how crispy the skin becomes. ![]() |

I usually bake it at a little higher temp, like 400 degrees. The skin naturally becomes crispy when cooked, and the higher temp keeps the inside from drying out.

That's how I cooked mine, but I also put my cast iron skillet in the oven first to heat up. When it was nice and hot, I added some bacon grease to the pan to melt, then put the chicken in it and when you hear it sizzle, I knew it was hot enough. I cooked it for about 20 min on each side. At the last 10 min or so, I put some melted butter on top of each drumstick and let it get brown and crispy. Kept it from drying out too.
