What Do You Prepare For The Week?

I need dishes that I can prepare on the weekends, for the week to take with me preferably to eat on the road, for lunches in my car as I am out in the field all day ~

I could probably find a microwave somewhere.......I have a large cooler and ice

I need some new dishes that can be made ahead of time, please? Keep in mind I am allergic to () veggies, except lettuce, celery, tomatoes ( is that a veggie? )

I am going shopping on Sat so I need lots of ideas! Thanks guys!

meatloaf (can make sammies on oopsies or with lettuce leaves)
Do you like any casseroles cold? I've seen a lot of posts where people mention that. Personally, I don't - I want them warm.

<sigh> tons more, but I haven't had enough coffee yet, so I'm drawing a blank......

Taco Salad (cook the taco meat on the weekend)
BLT minus the T and add C and E (cheese and egg) salad (fry the bacon and hard boil the eggs on the weekend)
If you can do DiVinci's pasta, I like chicken salad ~ cube and cook the chicken (on the weekend) and toss the hot pasta with a bit of HWC, parmesan, chicken, salt and pepper. Toss it in the fridge and it's delish cold!
Roast beef slices with mayo/mustard (whatever you like), a strip of cheddar and a pickle spear, rolled up.
Grill a tri-tip on the weekend, slice it up into strips and throw it on lettuce with blue cheese crumbles and Italian dressing. My favorite dressing for this is Berensteins Italian.

pumpkin cheese cake
ham ot turkey rolls with cream cheese
deviled eggs
taco salad
tuna salad with chopped up HB eggs, celery, pickles and mayo
egg salad with salt/pepper
make oopsies and you have buns for sammy's all week (you can assemble in your car before you eat)
cubes of cheese and meat you can nibble on while driving
roast a whole chicken and take off bone (dip chicken in mayo while driving)
sugar free jello (make and divide in ind. cups)
steak
laughing cow cheese or ind. squares of brie

Sorry to ramble. I eat in my car daily and my lunch box is full of goodies. What I found works for me is I start the week a regular lunch of my choice. Then I take the lunch bag in the house and add left overs from dinner. This adds to my variety. By the end of the week I have so much to choose from. If I get the munchies I can snack from my bag in the house. the kids never look in MOMS bag. Depending on where you drive, you can ask to use their microwave. Most people are really ok with you using it, just cover it.

Number of reasons, actually, Jen..I am tired. I have so many reports to do as it is the end of the month and I need to go to Costco...and Sunday I am committed to the movies with friends and my daughter...

What do you do that has you driving? I work as a sales rep for Coca Cola. So I am in conveinence (sp) stores daily. Some I ask to use, mostly the ones I have a friendship with. Always cover your food, you never know what was splattered in the microwave. Another idea is to bring things in a thermos. It stays hot if you can eat early enough in your day.

The bacon-wrapped poppers travel well and are about as good cold as they are hot. Also Scotch eggs are yummy and travel well!

Uh oh, has Diane heard about you not going yet? You may yet get your underwear pulled up over your head! LOL!

I work with families with special needs in many areas ~ we teach independent living skills and each of us see clients on our caseloads ~ I love it. I work a lot with families that have CPS issues, drugs, domestic violence...

I would have never thought of covering my food....thanks for the tips!! Convenience stores have microwaves, right?

[COLOR="Purple"]Marie ~ I make oopsies in those flat, round ramekins. Before I bake them, I sprinkle cheddar cheese on top, which makes it more crispy. I use these whenever I want Togos. Just buy your sandwich and switch the bread for your oopsies! Make sure you grease the ramekins though or they will stick bad!

This past week? Nothing! Hence the reason for this thread

Sometimes I can come home and eat, but this week I could not
