Coconut Flour Brownies
Preheat oven to 350% and grease a 7x11 pan with coconut oil.
1 8 oz cream cheese, softened 1/2 cup (1 stick) butter, softened 3/4 cup erythritol 2 T not/sugar Mix the above ingred with electric mixer until fluffy and light. Add 9 drops of liquid splenda or other sweetner to equal about 1/3 cup. 1/3 cup cocoa powder 1/3 cup heavy cream 2 t vanilla extract Add to the above ingred and again beat well. 4 eggs Add eggs, 1 at a time, beating after each addition and scraping sides of bowl. 1 cup sifted coconut flour Add to above mixture and whip on high speed until mixture becomes very thick and paler in color. It will be very thick. Put mixture into pan and spread evenly. Bake 30 minutes or until toothpick comes out clean. I put mine in an 8x8 pan and had to bake an additional 15 minutes until it seemed done. I have to admit, these turned out very good. The batter wasn't particularly good and I thought I had wasted both my time and ingredients but was surprised at the final result. You can add nuts of course, or chocolate chips, whatever you would like. The original recipe says it tastes better even the 2nd day. You can also make muffins out of this batter, adjust baking time.

You know, I really hope someone else tries these. The longer they sit, and cool, the better they are. I am really impressed and I don't think I showed that in my initial post, so much in fact, I am taking some of these along on our trip to my BIL and SIL, she is also diabetic and a great cook.
Christina, I used the regular granular erythritol. No cooling effect that I can see in these, but I did add the 2 T of not/sugar. I don't think I have a 7/11 either, I used the 8xi b/c that is what I had, but they are thick and I did have to cook them longer. But, I just cut them into smaller pieces, so it doesn't really matter. I truly hope some others try these and I want to see what they think of them. One of the best baking experiences I have tried. |

Oh, plugged this into Lifeform. If you cut into 20 pieces, it is 4 net carbs per piece.

Looks good! I have just discovered coconut flour and am having fun with it. I'm off on an Erythritol search tomorrow so I can try some of these other goodies! Thanks for posting!

It is hard. They don't raise, and to be honest, they didn't look done, but they are really good, so I think next time I won't bake them quite as long.

More coconut flour yummy looking things, I want to invest in coconut flour but I am afraid because I am not a fan of coconut. Do they taste like coconut?
