LINDA SUE!! cream cheese clouds!

YYUUUUMMMMMMMM! Wow, I just tried the cream cheese clouds, and girl they ROCK!

I was looking for something I can take to a get together where I was asked to bring something sweet. I know that there are two being that are diabetic and plus I'll be there watching carbs, so I thought this might be worth taking.. and BOY WAS I RIGHT! I can't wait to see what all people have to say.

( I will keep you posted. and I will also have to not make these often... I could go WAY over board..LOL But what a TREAT!!!!!!! )

Check this one out; I tried to make the chocolate coating one time but I don't really need it. I make one batch and I think I get like 5-7 discs and I freeze them on wax paper or whatever. I think they are better than those LC ice cream bars at the store. I subbed in almond butter for the peanut butter and it had a chunky, nutty flavor and texture but they were delish. this is one of only 2 desserts I have in my diet.

I don't know if Linda Sue is the first to post creative recipes online, but she was the first I ever discovered through this site a couple years ago. Cream Cheese Clouds were the first things I tried making that were any bit more creative than whipped cream/cocoa powder/splenda. I totally credit her in my success with Low Carbing and sticking to it this time around as I realized that you can try to create substitutions of past favorites and still keep a low-carb lifestyle. Since then, people like Cleo, Charski, and others with online blogs keep me inspired and creative. I think we're all major foodies on this site so it's almost just a foodies site with a low-carb twist. it's by far my favorite daily site.

Oh I know!! Aren't these the best!! Over Thanksgiving I had made pumpkin ccc and they were darn good!

I have tried that too and luuuvvv it!!! If you like that, you should also try the Enchilada Bake, that is awesome as well!

Yes, I added unsweetened chocolate powder, but I bet it work better with the unsweetened melted chocolate. I just can't remember the quantity I added.

They were awesome!!

Just took the cream cheese out of the fridge to soften. I think I will be in heaven. Linda Sue has not lead me wrong yet.
