Crazy Egg Meatloaf
Anyone have it before? I checked out "eating Stella Style" from the library and it is in there. Amazing recipes too.

Crazy Egg Meatloaf
2 lbs hamburger 2 large eggs 1/2 c grated parm cheese 1/4 c diced red onion 1/4 c bell pepper 2T parsley 2 cloves garlic 1/2 tsp oregano 1/2 tsp basil 1 tsp salt 1/2 tsp pepper 5 hard boiled eggs, peeled 4 T LC ketcup Preheat oven to 350. Mix meat, raw eggs, cheese,vegetables and seasoning in a bowl. Place 1/2 the meat mixture in a 9-by-5 loaf pan. Place hard boiled eggs next to eachother on top of mixture in pan. Place rest of meat mixture on top of hard boiled eggs and prress lightly to seal and cover eggs. Spread LC ketcup on top if desired. Bake 1 hour 15 minutes or until temperature reads 165. drain fat off and let rest 10 minutes. Cut into 8 equal slices. 8 servings 10 grams fat 4 grams saturated fat 4 grams carbs 1 gram fiber 9leaving 3 carbs a slice) 30 grams protein This recipe is from "Eating Stella Style" By George Stella I hope you like it. It smells wonderful and the oven timer just ran. Great timing. Enjoy!

I've had something very similar. I've also made 'Scotch Eggs' with the boiled egg wrapped in sausage and then cooked brown. Yummy!

It tastes wonderful. I think it will be a regular on the menu. My grandma use to put hard boiled eggs in her meatloaf and I turned my nose up at it and went without. I was missing out. No wonder she never made me eat it. More for her and papa.

Hi Ya'll!!! Guess what? George has a NEW cookbook out on QVC. Check it out! He's going to be on QVC a lot this month. more than 10,000 have been sold so far. I've seen some of the new recipes and they are to DIE for. There are even enhancements to his New York Style Cheesecake!

Su, Scotch eggs are yummy. in fact my 9 yr old has requested them. George Stella is an inspiration. I will be watching for his book on QVC. Whatever happened to Blaine Jelus of Blaine's Low Carb Kitchen on Fit tv? also what happened to Low Carb and Lovin' It on Food network? |

I am to cheap. I borrowed it from the library. I may buy it some day because the recipes are wonderful. I may just photocopy the ones I love and put them in my LC folder.

bekki, nothing wrong with being "cheap". I use the library all the time. I can't justify buying books unless I know for sure I am going to reread them. Same thing with cookbooks, if I can borrow from the library first to preview it, then I may buy it.
Since Scotch Eggs use breakfast sausage, I can see this being made with breakfast sausage in place of the hamburger and spices. I am thinking of doing that and taking it to my work on Friday during "treat" day. I signed up for this Friday but am supposed to take donuts NOT. I also wondered about doing this same kind of loaf in a bundt pan, but I wonder if more meat would be needed? Maybe stretching 2 lbs of meat with more veggies, increasing amounts of onion and green pepper, but also including red, yellow, or orange peppers, celery, mushrooms, green and/or black olives . . . the possibilities are endless.
