What to do with so much pulled pork...
Last night before I left to go bowling for NYE I put a big pork shoulder roast in the crock pot with some LC BBQ sauce. It was nice to fall asleep to the smell. Now I am shredding it and there is alot!!! I mean alot! I will bag it into smaller portions and put it in the freezer but does anyone else have a few ideas? Its so yummy and beautiful!!!

I usually take some of the pork out before I add the sauce but I have done exacty what you did.
Some easy meals I make with it are. Pile of shredded pork topped with cole slaw. Throw some pork in a deep skillet and add some green beans. Season with some cumin, garlic, salt and a can of diced tomatoes. Cook down and makes a nice one skillet dish with alot of flavor. A cheesey Pork quesadilla dip we eat with pork rinds. |

Care to share your Cheesy Pork Quesadilla dip recipe? I have 2 bags of pork rinds staring me down as I type? Maybe the boys coming for tonights New Years sleep over will eat it too.

Pulled Pork
Cream cheese Shredded Queso Cheese or any cheese you like. Can of diced tomatoes with green chiles, or Rotel works well. I put all ingredients together and heat in microwave. It's very good and filling. |

Opps forgot to add you can substitue salsa for the canned tomatoe with chiles.

I love pulled pork........pile it on top of a salad with a dollop of sour cream a little hot sauce - man oh, man - like eating a Chipotle's - good eating........I bet your house smelled wonderful! |

You can make a sort of machaca with it - saute some onions in some bacon fat (or whatever fat you prefer) til nearly translucent; add in some diced hot peppers (we like the canned red jalapenos, or fresh serranos, or a can of diced Ortega chiles) and some sliced green onions and stir around to get hot. Add the pork and stir to heat. Add 2 eggs per person, beaten up with a bit of cream. I usually make enough for 3 people so use a good handful of the pork and 6 eggs. Scramble til eggs are done to your liking. I add a bit of the green onion tops, sliced, just before the eggs are fully cooked.
Serve with green taco sauce if you want, or any kind of salsa you like. It will stick to your ribs for hours!

I love it stir-fried with whatever veggies I have on hand at the time. Some time I mix in a package of shirataki noodles. Season with fish sauce, soy, fresh grated ginger and some hot peppers or garlic chili sauce. It's wonderful with shredded cabbage, diced zucchini and a few julienned carrots. But I'ved used broccoli slaw for a quick stir fry too and shredded pork roast is my favorite meat for stir fries. Lots of flavor

I love that the pork roast is so cheap & after u shred it you have so much. we ate it two nights in a row & then I froze the rest. I want to try it on an oopsie with coeslaw on top the pork & mustard bbq sauce. probably try that next week.
