Shirataki noodles are amazing!!!

These noodles are amazing! I made them in a stir fry the other night, and it was fabulous. Next week Im going to try chicken alfredo. The best thing of all... less than one carb per serving!!! They have no flavor so you can mix it with anything. The noodles I found were made out of yam flour. They were translucent looking. Great texture. There is a slightly unpleasant smell, But if you wash them in a strainer there good to go. LOVE, LOVE, LOVE, these noodles!!

YEah.....me luv the SHirataki noodles too !

They are really really fantastic in chicken alfredo....I do a version of that with the shirataki noodles, chicken parmean cheese & alfreado sauce, with broccoli florets and artichoke hearts...

I am so unbelievably hooked. Some great recipes can be found in Dana Carpender's new cookbook The Glycemic Load Cookbook.

There are lots of brands out there - different shapes, textures, tastes...I love them all. Oriental markets have a real interesting variety.

I will not eat pasta again. Dreamfields just isn't worth it to have a measly serving of pasta when I can have a big plate of shiratake for a fraction of the calories and carbs.

Once you know how to prepare it correctly, it's awesome. I love my pasta and used to eat LARGE platefuls of the stuff. This is such a wonderful substitute.

Does anyone know if the shirataki yam noodles taste different than the tofu noodles. Is the texture different?

[COLOR="DarkGreen"]I can't find any taste in the yam-based ones, which is all I get. The larger style 'noodles', like the penne, have a gummy-bear type consistency. I use the orzo style as rice replacement, angel hair for spaghetti, and have cut the penne in smaller pieces and used as a bean sub in chili. The orzo and cut-up penne I use in broths for lunches or snacks if a meal wasn't filling. Just remember to rinse well and drain, even fry till dry if using as spaghetti sub or to be used in a sauce.[/COLOR]

Don't know that either have a "taste" per se, but the texture is DEFINITELY different. The yam ones are chewy to the point of "resistance", while the tofu ones are softer, closer in texture and mouthfeel to a very overcooked wheat noodle -- soft and limp and overly tender.

BTW, the Hungry Girl website has oodles of recipes on these noodles, as does this board -- just do a search for "shirataki" or "miracle noodles".

For awhile I could find WildWood spinach fettuccine tofu noodles--which were the most delicious ever--with no need to rinse and no fishy taste--my Whole Foods stopped carrying them and I keep meaning to go on the WildWood site and see if I can order a case!

For those who have tried these noodles, are there any stomach side effects?
I've tried wheat pasta and other low carb pastas and they messed my belly up.

Just wondering if anyone has any issues with the Shirataki noodles?

Sounds like wheat/gluten intolerance issues? How do you do with fiber -- if you are sensitive to lots of fiber these will be an issue for you because they are primarily fiber.

Yeah, it seems like I'm sensitive to wheat. I have tons of allergies, so I'm assuming it's probably a wheat allergy.

I may start off with a couple fork fulls of Mac n' Cheese with these noodles and see how things go!

I love them too. Does anyone know what kind of shelf life they have? I have some Konjac foods ones and I thought they said they have a one year shelf life unrefrigerated but I can't remember...

I heard the same thing. I've kept them in the refrigerator for months. Never had a problem.

wheat messes my stomach up too, but the Shirataki noodles do not. I did need to drink quite a bit more water after eating these as they are VERY fiberous. I couldn't eat very much of them because they are SO filling - maybe 1/4 cup per serving and I was STUFFED. They remind me of a very chewy rice noodle, nice with curry or stir fry. DH absolutely loves these.

Konjac Foods packaging claims 1 year shelf life, unrefrigerated. I've kept mine that way for many months with no problems, but I do frankly sometimes wonder how long they have been unfridged before they get to me: shipping from China, sitting at Los Angeles docks before offloading, sitting in distributor's warehouse, etc.

But that's just if I haven't had my daily Chamomile.

Ah, well that gives me hope. I'm going to start off with making little snack portions of Mac n' Cheese and see how my belly holds up. Anything fiberous I wouldn't eat a ton of anyways.

I've been afraid to try these as I've heard mixed reviews, but I think next time I'm at the store I will have to buy one pack and give them a try. From what I gather the key is to really rinse the heck out of them....

These are SOOO good and luckily I have a local chinese grocery close to my house and can pick them up when I go for our usual grocery shopping.

I`ve been making this quick meal whenever I`m super hungry and there`s isn`t time to waste LOL

This is the one I use: Tofu Shirataki Fettucine - The Low Carb Grocery Canada

Rinse them well in running cold water
Put them on a fan and fry for a few mins to basically get all the water dried up. (I noticed the water is what makes them smelly)
Add a bit of butter (I use the herb butter)
Add shrimp
Parsley
A bit of pasta sauce
A bit of cream
And tobasco sauce to taste (I use lots since I like it really spicy) I noticed other sauces don’t quite taste right so it’s always Tabasco for me.

Then just turn the heat down and let it simmer for a few mins (Usually I clean up during this time) This is such a quick FEELING meal…I’m going to probably make this for lunch today so will post a photo of it then.


Oh and they are very good for `going`
