Chewy Honey Nut Cookies (photo tutorial included!)
Here are some simple, gluten-free and egg-free cookies that take minutes to whip up, with no fancy ingredients. They are naturally sweetened with stevia and a bit of real honey. The texture is very chewy and chock full of crunchy, toasted nuts.

Preview: ![]() ![]() ![]() ![]() ![]() ![]() Chewy Honey Nut Cookies Makes eight to twelve cookies Ingredients: 1 cup blanched almond flour 2 tablespoons organic unsalted butter 2 tablespoons raw honey (dark in color, for more flavor) 4 packets or 1/4 teaspoon pure stevia extract 1/2 teaspoon pure vanilla extract 1/4 teaspoon cinnamon 1/2 teaspoon aluminum-free baking powder 1/16 teaspoon sea salt 1/2 cup chopped, toasted pecans Preparation: Melt butter. Stir together all ingredients except almond flour and pecans. Fold in almond flour until a smooth dough forms, then add nuts until dispersed throughout dough. Shape into flat cookie rounds on parchment paper. Bake for 12-18 minutes, or until slightly browned around the edges. Let cool for 10 minutes before removing from parchment. ~5.4g net carbs per 1/8 of a recipe, 4.3g per 1/10th, and 3.5 per 1/12th

Lauren, sorry if I missed it but I didn't see the baking temperture in your post or in your blog. I am thinking of trying these with yacon syrup for the honey and a different sweetener.

Oh my goodness, those look yummy! I don't know if it's the camera....but it looks like cranberries are in those. I still have a ton of unsweetened dried cranberries that are just begging to be used.

Here's my report on the cookies...
[COLOR=red]WONDERFUL![/COLOR] [COLOR=black]My kids couldn't wait for them to get done. We stole one off the baking sheet one minute early Mine were a bit crumbly while hot but I'm sure they'll harden as they cool. The ingredient amount was perfect![/COLOR]Oh - my subs were splenda rather than stevia, SF honey rather then raw honey, but that's it. I know it goes against the concept of natural eating but I had to make do with what I had at the moment. Looking forward to a more natural new year! ![]()

Dh even liked these - and he's not a pecan fan. I took a nap this afternoon and I woke up eager to enjoy a cookie...well...they were gone!
It's ok. I was able to eat 2 & 1/2. There are 5 of us so a dozen is just perfect! They were crispy & chewy (if that makes any sense ) and a wonderful sweet taste from the SF honey |

Cylde, cranberries are a great idea for these cookies! Those are actually toasted pecans in there. The nuts turn a rich mahogany when roasted.

Very nice chewy cookie Lauren. I made mine using yacon syrup and diabetisweet. They turned out very nice but with my oven @ 275 degrees and on parchment it took almost 26 mins.

SnowWhite, your additions sound so good! So glad your family like these LC treats.
Kevin, thanks for trying these with yacon and taking a photo. Good to know it works with that sweetener. It's funny with ovens. I made these cookies again and they were perfect after 20 minutes, but in my apartment oven they almost burn at 13! So strange. Maybe yacon is more watery than honey? |
