In need of comfort food
Hi,
Day 2 for me and with it being so cold out I am CRAVING some comfort food. HELP!! Is there any low carb soups and Hot Chocolate I could make? Theresa |

If you're not doing strict induction, you can use unsweetened cocoa powder and half water/half heavy cream to make hot chocolate. Sweeten as desired. A touch of vanilla is good.

You could warm up some chicken stock, I use organic without any msg or junk, then while it's hot, drizzle in a scrambled egg slowly. VERY comforting and yummy!

Or buy low sodium chicken broth and drizzle scrambled eggs into it for yummy egg drop soup.
Try flavored teas too...they come in all kinds of warm winter flavors and are yummy and decadent. |

OK so here is the soup I practically live on in the winter months...there are so many ways you can vary it...hope you love it!
1 lb gr chicken breast--have used turkey, gr beef and also thrown in some sausage at times too Seaon with garlic, salt pepper, onion, red pepper flakes , chili powder...whatever spices you like--I have even thrown in some hot sauce at times I brown in a bit of chicken stock then when done I add more stock...today I used 2 big cartons. Then I add about 1/4-1/2 cup Parmesan cheese and a package of baby spinach--have used different greens as well...whatever you like and/or have on hand Let it simmer a while and then add some just whites egg substitute, but have used real egg whites as well...let it simmer some more and it gets thicker and tastes like my mom's italian wedding soup!!! I swear I live on this in the winter--easy, easy to vary and so delish! |

Try Linda Sue's Taco Soup
1 lb ground beef or round (browned) 1 Sm Onion 2 cloves garlic 1 pkg cream cheese 2 cans rotel tomatoes 2 cans beef broth 1 TBSP Cumin 1 tsp Chili Powder 1/2 Cup Cream Brown Ground Beef with the onion and garlic...drain. Place meat onion mixture back in pot and add cumin and chile powder. Stir and let cook 1 to 2 minutes or until incorporated. Add cream cheese stirring constantly until melted. Add rotel, broth and cream and bring to a boil. Turn down and let simmer 15 to 30 minutes. Top with your favorite topping...Cheese, Sour Cream, Cilantro etc....hearty and fresh.....

Soups? Oh gosh yes.
Here's a great one that is ridiculously easy: 1 pint of heavy cream 16 oz package cooked broccoli chopped 1 stick of butter 8 oz shredded cheese garlic salt / pepper Melt butter in pan. Add heavy cream and garlic and seasonings and heat to boil. Add broccoli and cheese until melted .. ENJOY PS you can add cauliflower too if you want ! Betty |

Swiss Miss has a cocoa mix called Sensible Sweets and it says Diet - 25 calories on the front. This has 3 net carbs (4 minus one gram of fiber). I wasn't sure what to expect but it is very yummy! Maybe better to wait until finished with induction but a much better choice than the full sugar version!

I have to agree with Mellie's suggestion. The Cream Southwest Taco Soup is wonderful. I have made it with chicken also and it is great!

I can't resist adding my favorite to this already long thread!
Seriously, all my friends, low carbers and non-low carbers alike, just love this soup. I've never been able to find smoked turkey drumsticks, so I just use ham hocks, diced ham, or even smoked turkey sausage. YUM! Moonchild's LC Split Pea Soup In a large soup pot, put in a whole bag of frozen cauliflower and a whole bag of frozen string beans. Add enough water to cover plus about another inch on top. Boil until veggies are tender. Removed the veggies and set aside. In the same water, add about 2 TBLS Maggi chix bouillon powder. Put in 1 whole smoked turkey drumstick, or some ham hocks. Put the lid on and let soup simmer until turkey is falling off the bones, or ham is very tender. Remove meat and bones from broth and set aside to cool enough it can be handled. Put the veggies in a blender and puree. Add them to the broth. Pick all the bones from meat (dice the meat into appropriate size for you) and return it to the broth. Stir and taste. Add salt and pepper to taste. Add some garlic powder if desired. To make the soup thicker, use xanthan gum or guar gum. The soup can also be made thicker by using less water. Makes a little over 10 cups. Whole Recipe: Cals 756 ; Fat 29 ; Carbs 35 ; Fiber 14 ; Net Carbs 21 Per 1 cup serving: Cals 76 ; Fat 3 ; Carbs 3.5 ; Fiber 1.4 ; Net Carbs 2.1 (Nutrition data will vary depending on the amount of water used.)

Here's my favorite hot chocolate:
Warm Chocolate Egg Cream (you may know it as Hot Chocolate) 6-8 oz chocolate almond milk 1-2 oz hwc 1 T dutch cocoa powder(stir it in really well) 1 T coconut oil 1 T chocolate DaVinci's (or any flavor that sounds nommy) small sprinkle from my Splenda QuickPack 2 eggs (warm them in a bowl of hot water for a few minutes) Nuke the first 6 ingredients until warm to your liking. Zap it in the blender. Add the warmed eggs and (quickly, before the eggs start to cook, bleah!!!)zap it again.
