Banana Split Cake - OMG this is good!!!
This tastes EXACTLY like a banana split!!!!! Very rich and addictive, and just 4.9 carbs per piece!
I know that some people on here will FREAK OUT when they see the recipe contains a banana, and some pineapple, and say "There's no way I could eat that fruit". Well guess what, unless you're on Induction, you can probably enjoy this cake because it only has 4.9 carbs per slice! I have read every nutrition label on the ingredients, and also punched every ingredient into ******. You CAN have this cake! All nutrition info is below the pics, and a few more tips. Banana Split Cake ![]() CRUST - Melt 3 Tablespoons Butter, and stir in 2 Tablespoons Sweetener blend. Combine with 1 Cup Almond Flour. ![]() Spread crust mixture into greased 7 X 11 pan. Bake at 350 for about 12 minutes. Do NOT allow to brown. Set aside to cool while you prepare the filling. ![]() FILLING - Mix 8 ounces Cream Cheese, 1/2 Cup Sweetener blend, 1 Egg, and 1 Teaspoon Vanilla. ![]() Spread Filling onto Crust, and bake in a water bath for 35 minutes at 325 degrees. Do not overcook. This should just have a 'dry' look on top when done, and should not be brown anywhere. In this pic, the larger pan is filled half way up with water (That is what is meant by water bath). ![]() Cool on counter, or in refrigerator. Top with Bananas. ![]() TOPPING - Whip 1 Cup Heavy Cream until stiff. Add 2 Tablespoons Davinci Vanilla syrup, and whip a little more. ![]() Spread 1/2 of the whipped topping over the bananas, and add the pineapple. ![]() Cover the pineapple with the second half of the whipped topping. Top with Walnuts, Chocolate drizzle, and Maraschino Cherries (optional). ![]() Put in mouth and enjoy! ![]() 1 Cup Almond Flour..................640 calories........12 carbs........56 fat........24 protein 8 ounces Cream Cheese............792 calories..........6 carbs.....79.1 fat......17.1 protein 1 egg......................................71 calories.......(.4)carbs..........5 fat.......(.3) protein 3 Tablespoons Butter................305 calories.........0 carbs......34.6 fat..........1 protein 1 Cup Heavy Cream...................821 calories......6.6 carbs......88.1 fat.......4.9 protein Banana (108 grams)....................96 calories.....21.9 carbs......(.4) fat.......1.2 protein Pineapple (68 grams)..................33 calories.......7.6 carbs..........0 fat......(.4) protein Walnuts (30 grams)..................200 calories.......2.0 carbs.........20 fat.........5 protein Sweetener (1/2 Cup + 2 Tbsp).......8 calories.......2.0 carbs..........0 fat.........0 protein 2 Tablespoons DaVinci syrup..........0 calories..........0 carbs..........0 fat.........0 protein 1/4 ounce Pre-melted Cocoa........40 calories..........1 carbs..........4 fat......(.5) protein 1 Teaspoon Sweetener for Cocoa...0 calories..........0 carbs..........0 fat.........0 protein Totals..................................3006 calories.......59.5 carbs.....287.2 fat.....54.4 protein Per serving (12 slices)..............250 calories........4.9 carbs.........24 fat........4.5 protein The Cherries are optional, and 2 carbs each (ouch)! I picked mine off, but your non low carb friends will love them! The bananas slices are probably only about 1/8 inch thick, but they pack a ton of flavor. You can see that I got about 34 good slices from a medium sized banana. I also used Pineapple Chunks (in juice, not syrup). Oh, WOW! I usually try to bring a very special low-carb and gluten-free dessert to our big family Thanksgiving dinner. If I don't, I have to skip dessert, and that's nothing to be thankful for!

THis is such a clever idea. We could use it with a variety of fruits. I would like to try it, but it will have to be when company is coming. I have portion control issues. Thanks so much for your ideas and pictures.

OMG!!! I am so not a banana person, but I'm thinking strawberries and pineapple will be perfect for Thanksgiving... thank you so much for sharing... Holy Cow... I'm so happy to have such a cool dessert and no one will know it's low carb but me!!! bwaaaahhhhhaaaaa.. oh wait it's for Thanksgiving not Halloween...giggle

![]() shadowzip..............yes, Erythritol will work well here, that is what I used. My sweetener blend is 1 Cup Erythritol, 1 Splenda Quick Pack, and 1/8 teaspoon Stevia. I originally tried to make this no-bake for simplicity, but I did not like the 'crunch' that the sugar had. That is why I had to bake it, just to melt the sugar! eastbruce...............if mandarin oranges and pineapple are your thing, you might prefer this: Fruit Pizza, only 5 carbs, HUSBAND & KID friendy, PICS SueMc...................slightly frozen huh? I would like to add this tiny hint: To keep your bananas from going darker..dip them briefly in the pineapple juice from the pineapple.. I do think this would be a great dish for a crowd..To be eaten in one or two days for sure.. Thanks.. |

Sweets are my 'thang' though, so if you're ever looking for something sweet, I'm your man ![]() CarolynF.............the bananas are turning brown quick, I will remember your tip next time (and there will be a next time very soon)!!! SueMc..................GREAT TIP!!!!!!!!!!!!! Everybody, stick this in the freezer for 20 minutes before eating!!! Tastes even better!!!!!!!!!!!!!!!!!!!!! mslaster................all of the sweeteners are dry, shelf ingredients. Simply store in a sealed container on your shelves. There is no need to refrigerate. Also, please see the note to SueMc above...........stick this in the freezer for 20 minutes before consuming. |

Hi Babsy,
For the chocolate glaze, I used a 1 ounce pack of the Nestle pre-melted unsweetened chocolate. Add 1 Tablespoon sweetener blend, and melt the two together in the microwave. All you are doing is trying to get the erythritol to melt so that it does not have a gritty texture. Put the mixture in a plastic bag, and cut a 1/16th inch hole in the corner. Drizzle onto cake. I only used about 1/4 of the mix, that is why the cocoa is listed as just 1/4 ounce above. Also, the chocolate should be a little bittersweet, so don't try to make it sweeter by adding more sweetener. Don't forget to stick your single serving in the freezer for 15 to 20 minutes before eating. It really makes a big difference. Hope you enjoy your cake as much as I am, and have been enjoying mine ![]() |

It comes in little 1 ounce foil packs (about 8 in a box I think). Yes, it is kind of like a paste. If you can't find it, you could probably also just melt some sugar free Hersheys chips (I seen them at Wal-Mart the other day). They are sweetened with Maltitol, but you will be using such a small amount that you shouldn't have any of the side effects normally associated with Maltitol. You could also probably just use a semi sweet baking square. By the way, my bananas turned brown really fast. You should try dipping them in the pineapple juice like CarolynF suggested. This is YUMMY !!! I am already down to just 5 pieces ![]() |
