lol...this thread keeps popping up and I am going to have to make some pumpkin cubes tonight so I can feed that craving I am getting for a Pumpkin Spice shake.

I use canned pumpkin. It's much easier to work with. I am sure I would not bother if I had to start with a fresh pumpkin.

For fresh pumpkin juts scoop out seeds, cut into manageable sizes, peel, place in water and bring to a boil, then turn down to a simmer and cook until tender then drain...you have fresh pumpkin. Easier to buy canned and there isn't much of a taste difference.

I've also addedpumpkin andpumpkin pie spice to a vanilla Atkins shake for a lazy man's shake and it is really good. Frozen pumpkin is now my new addition, thanks.

I made my heavy cream and pumpkin frozen cubes last night and enjoyed a pumpkin shake this morning---was a great change from my usual shakes and will keep cubes available in the freezer for quick shakes in the future.

The pumpkin cubes do sound like a good idea.Ice makes it a great consistency but waters it down some.

OMG! What a great excuse to have "pumpkin pie" at other times aside from Thanksgiving and Christmas.
BTW, if you're afraid to eat raw eggs, or if you have immune system issues like I do and should never eat them except well cooked, you can use Egg Beaters or another of the pasteurized egg products without cooking them, and without fear. |

bobo I just tried your pumpkin shake. OMG!!!!!! is all I have to say. I couldn't wait to freeze anything. I needed it right now and it was awesome! This would be so good for breakfast. That is the worst time of day for me and I usually skip it. THANKS!

I just tried your shake...it's amazingly delicious! Thank you kindly! ![]() I found these cute lil containers shopping today. I've since packed 4 with pumpkin and 4 with heavy cream for freezing. Tomorrow morning just drop em in the blender. They hold the 1/3 and 1/4 measurements beautifully. ![]() Thanks everyone for the Hamilton Beach single serve blender recommendation as well. I'm too lazy to wash up ice cube trays or containers - I just line a baking sheet with waxed paper and make little "blops" of canned pumpkin (I use my smallest "ice cream scooper" which formerly made cookie dough all equal in size!) and freeze, then put all the blops into a ziploc and keep them in the freezer til I need them.
You can use the waxed paper right away for a second batch too! |

Might I add, I tried using an emmersion blender as the picture shows, but it didnt get through the frozen pumpkin icecube size blocks. Had to transfer it all to my huge blender. I might let the frozen pumpkin thaw just a little before using. Id prefer to mix it up in the cup Im going to drink it in rather than lug out my huge blender.
But as I mentioned the other day DELICIOUS!!!! I used DaVinci SF Vanilla as my sweetner. I HATE any granulated or powdered artificial sweetner. |

I use : 8 oz water 2 tablespoons of Davinci's Pumpkin Pie flavor .5 scoop Jay Robb Vanilla Protein Powder Pumpkin Pie Spice Cinnamon 3 tablespoons of Pumpkin 1 tablespoon of HWC 2 Eggs Ice Blend and drink - I love it! |
