2 Minute White Bread
I find the flax bread to be a little overpowering on it's own, so I went in search of a bread substitute for sandwiches and pizzas that was relatively neutral in flavour whilst still being high in fibre.
25 grams dessicated coconut, ground into flour (1.8 carbs) 1 tablespoon psyllium husk, ground into fine powder (0 carbs) Pinch salt Pinch baking powder 2 eggs, beaten thoroughly (0.8 carbs) 1 tablespoon EVCO 2.6 carbs per serve. Beat all ingredients together thoroughly, and nuke in microwave for 1-2 minutes. This will make one thick square sandwich slice(nuked in a square plastic container). I cut it into two thinner slices for pastrami sandwiches etc or leave it whole for french toast. Poured into a large round plastic container, you get a nice thin crust pizza base. You can make this wholegrain by adding a bit of flaxseed to it, and adding extra egg yolk.

Yum, going to have to give this a try! My microwave stopped working a while ago, wonder if this would turn out in the oven? I'll give it a try and post back. Does this have a strong coconut flavor? I love coconut but DH can taste EVCO in anything (even if there is only a teensy amount).

I think it would work in the oven. I don't think it has a particularly overwhelming coconut flavour. The addition of the salt helps, and if you added some garlic powder or something to counter the sweetness I am sure it would be fine. I am going to experiment with adding a little lemon juice or lactose free sour cream to make a sour dough as the texture is quite heavy.

Ok, here is my guess. ! ounce of my coconut is a little less than 1/2 cup. 28 grams=1 ounce. Therefore, 25 grams of coconut is between 1/3 and 1/2 cup.

Brenda I just digitally measured the coconut flour , then used Tablespoons.
25 grams coconut = 3 Tablespoons. |

Ok Kiddos. I've been looking at this recipe. So I made it.
This is what I used. 2 T. coconut flour ( I used Bob's red mill) 1 T. spyllium husk powder 2 eggs 2 T. coconut milk 1/4 tsp. baking powder 1 T. + 1 tsp. EVOO salt I mix this with a fork at first then my stick blender until smooth. Micro wave for about 2 mins. Microwaves vary. I think the next time I'll bake it. To see what happens. It's very dense. It rises then goes back down. I will see what an oven does next time. I have it in a toaster oven right now to brown it. I will have a pic soon.

My husband and I are drug dealers, so we have a digital scale at home.
... ![]() Is this thing on? I got 3.5 tablespoons for 25 grams of coconut flour. Three sounds right, and I love the idea of lessening it to 2. Here's what mine looked like with 3.5 tablespoons. It was lumpy when I was mixing it, so the lovely peaks are really just toasted lumps. ![]() I just bought a bag o' husk powder, and I'm amazed at what it adds! I can't wait to try this with less coconut flour.

there's a whopping load of fiber in that piece of bread. Drink A LOT OF LIQUID with your toast or you could end up with a real problem in your intestines with a lump of dry fiber stuck in your gut...
2 T. coconut flour has 5 gm fiber 1 T. spyllium husk powder has 5 gm fiber by anybodys calculation, that's a lot of fibre in one piece of bread. |

So I did a test to see how far 1 Tbsp of psyllium husks expand. These are NOW Brand, whole psyllium husks. I didn't grind them up. They are tiny, fluffy, little poofs of fiber.
1 level tablespoon took 12 tablespoons of water and formed a thick gel. (12 Tablespoons = 6 fl ounces). Has anyone who've made these and Maria's rolls cooked them, then broken a bite or two up and placed it in a glass of water to see what it does in the liquid after cooking? For instance, once cooked, does it cease to swell in liquid? Also, why grind the husks up (for those of you using whole husks and grinding theirs)? Why can't you just use the whole husks? Thanks! Pooti, when I made the rolls it took about 1/2c (8T) husks to get 5T of ground husks for the recipe...also it makes a finer flour.
