I have made pizza crust with it before. Just add italian seasonings, press into the bottom of a pie plate, and nuke 5 minutes or until browned. Add cheese and other toppings... and more seasoning. It is very delicious and low-carb but a bit high on calories, esp. if you do overkill on the cheese.
That said too much beef makes me sick, so make sure you use other things in your WOE besides just ground beef! I believe it is the aldonic acid that many people (like me) react to. |

I make stuffed burgers. I usually stuff burgers with chopped vadalia onions & some shredded cheese + seasonings of choice. I cook in coconut oil & top the burgers with more shredded colby jack cheese. When finished I top with fresh salsa, Yummy

My favorite meatball recipe:
SPINACH MEATBALLS 1.5 lbs very lean ground beef (or venison or ground turkey) 2 eggs, beaten .5 cups shredded parmesan 1 10 oz pkg spinach, thawed/drained 1 pkg McCormick's Zesty Herb; or, Grill Mates Tomato, Garlic & Basil Dash garlic powder Mix all thoroughly, shape into balls, bake at 375 for 15 mins, turn, bake 7-10 mins longer. I make these ahead, store in frig to eat throughout the week. |

can i ask what this is?? i have had white castle a few times when i have been to the states and to be quite honest i think it's gross...does the cheeseburger pie taste like it?!
as for crackslaw....it has it's own religious...or should i say CULT following LOL!!! there are a few variations of it but it's pretty much like a coleslaw mix/groundbeef blend among other ingredients... |

ohhh meatloaf just sounded excellent to me right now!!!! is there anything that can hold it together though OTHER than egg & pork rinds? i tried that once before and not only did it taste terrible, it didnt work lol!

Ground beef is one of most versatile meats out there. Stir-fry, "sloppy Joes" (I wrap in lc tortilla for me), swiss steak, meatloof, meatsauce (tomato based), "tacos", scramble with eggs, onions & peppers, meatballs, meatloaf, stuff in tomato or peppers....the list goes on and on....

I love my meatloaf 50% ground beef 50% ground chicken. The chicken not only adds moisture to the mix but gives it flavor. I add no fillers as I did in my pre-lc days (i.e. breadcrumbs)...instead I add grated romano cheese, onion, chopped red sweet peppers, celery, salt and pepper. Sometimes I will add some Heinz LC Ketchup to the mix or Steels Gourmet BBQ sauce.... If I make an Italian Meatloaf I add my homemade red tomato sauce over it and sprinkle it heavily with shredded cheese...and bake for 45 minutes. Yum!

mini meatballs in marinara make a great meal with zucchini noodles, or in a lowcarb wrap with mayo, or just by themselves are great. They don't need any binders. I usually mix the meat with one egg and a dash of heavy cream, some tomato paste and grated parm and italian herbs roll into teeny balls and bake. Much less intensive to make and they turn out better baked.
I also make them not-italian flavored and put in a soup with sauteed seasonal veggies. meatloaf is awesome. you can flatten the meat mixture out on waxed paper (I make mine SPICY) and lay strips of swiss cheese and mushrooms, peppers whatever and roll up for killer stuffed meatloaf that looks really cool when sliced. gorgonzola burgers are a big hit every time we grill, just make two really thin patties and fill the middle with crumbled gorgonzola, cook as usual after sealing the edges well.

Burgers.. stuffed with Blue cheese served with fried cabbage and onions.
Meatloaf meatballs- hamburger, veal, sausage if you like, onion, parm cheese, parsley, garlic , s&P , an egg and maybe some ground pork rinds if I like.. rolled and baked. Made white castle pie last night and my guy loved it.. I liked it just fine. Reminds me of a hamburger gravy I used to make...serve with pepperoncinis and juice... YUM. |

I make a lot of meatloaf, held together with egg and cheese... there are a couple of good recipes on Linda Sue's site. I usually use 1/2 pork, 1/2 beef in my meatloaf.
ALSO, another Linda Sue recipe I found was for Hearty Bacon Cheeseburgers... Oh my god. I think those were some of the best burgers I've ever had, even without a bun. |

My favorite ground beef recipe is my meatloaf - but I do use 1 cup of crushed pork puffs as well as an egg. Its my favorite lunch to have, with a nice thick slice on an oopsie roll with a generous smear of mayo. I also like to fry it with onions then stuff a green pepper with it, top it with mix of mozza and parmesan cheese, then bake it in the oven until the cheese is all golden and bubbly.

Here's our favorite meatloaf recipe:
2 lbs ground beef (about 85% works best - moist but not too greasy) 2 eggs 1/2c parm or romano cheese (this took the place of the breadcrumbs) 1/2c chopped parsley 1/2c sour cream 2T LC ketchup 1T dijon mustard 1/2 medium onion chopped (or more or less to taste) 1-1/2 t salt 1/2 t pepper This make one large loaf or 2 medium. 350 degrees for about one hour. Yum! |

Kim, I believe this is the "original" recipe though as another poster mentioned there have been many variations. To LC it of course you would omit the rice.
Orginal Crackslaw recipe, from EATING FOR LIFE BOOK Servings: 2 2 portions brown rice (about 1/2 C uncooked) 2 portions lean ground beef (about 1/2 lb) 1 TBSP toasted sesame oil 2 cloves garlic, minced 3 green onions, sliced 1 C broccoli slaw 1 C napa cabbage, shredded 1 TBSP lite soy sauce Crushed red pepper flakes, to taste 1. Prepare brown rice according to its package directions 2. While the rice is cooking, in a medium skillet or wok, brown the ground beef over medium heat until no longer pink. Remove the beef from the skillet, drain and set aside. 3. Heat sesame oil in the skillet over med-high heat. Add garlic and green onions; stir-fry for 2 min. Add the broccoli slaw and cabbage; stir-fry for 2 min. Add rice and soy sauce, stir-fry for 2 min. 4. Return the cooked ground beef to skillet with rice and vegetable mixture and season with red pepper flakes, to taste. Stir until ingredients are well combined and heated through, about 2 minutes. 5. Repost of Driving Mrs Daisey Renee’s Hamburger Salad Thingy I tried something new for dinner. I've been having the same ol' salad for weeks now and found a recipe for something different. It was simple and really good, so here goes if anyone's interested: SERVES 4 , 4 salads 1 lb ground beef 1/4 cup chopped onion 4 cups chopped lettuce 1 medium tomato, chopped 20 hamburger dill pickle slices (coarsely chopped) 1/2 cup mayonnaise 2 teaspoons yellow mustard 1 tablespoon heavy cream (more or less) salt pepper garlic powder Brown ground beef and onions with salt, pepper, and garlic powder until cooked through. Toss while hot with lettuce, tomato and pickles. You want the lettuce to slightly wilt. In a small bowl, mix together mayo and mustard, then thin it out with heavy cream until thin enough to pour. Stir dressing into salad mixing everything together well. This salad tasted best when ingredients are warm or at least room temperature I sometimes heat for about 30 seconds in the microwave. Be sure to adapt ingredients to include your favorite hamburger toppings. I changed the recipe a little slince it was for one serving (me). I used fat free mayo, and half and half instead of heavy cream. I pust a silice of 2%American cheese on top of the mixture and then microwaved it for a few seconds - Dee-Lish!!! |

deep fried meatballs= mix in an egg and some parmesan, lc bread crumbs or sound finely ground brazil nuts or finely chopped black olives = form into meatballs and deep fry. They are way different than regular baked meatballs and the nice crunch on the outside is great when you are craving something crispy
blue cheese burgers = just mix in some blue cheese or feta cheese into the meat itself or else you can make 2 patties and put the cheese inbetween them, seal well and cook (dreamfield's) lasagne chili hamburger stew or soup sloppy joes on lc bread/wrap or on top of shredded lettuce add sausage seasoning and have breakfast sausage |
