Looking for induction casserole ideas.

I would like some recipes for casseroles or other all-in-one dishes that are low carb enough for Atkins induction, contain little to no cheese, and do not contain a lot of beef. Been eating tuna salad, so got that one covered. Would like some other dish ideas that I can make on Sunday night and bring to work throughout the rest of the week.

Something with chicken or turkey that doesn't contain cheese would be great. I'm not lactose intolerant, its just that cheese always stalls my weightloss, so try to avoid it. Too much beef makes me sick.

Also would like it to be something filling, since this would be the main part of my lunch.

I'm a huge fan of LindaSue's website. Some of the casseroles/quiches that have been repeat favorites in our house are:
Dottie's Burger Scramble Florentine
Cabbage Roll Pie
Coney Island Pie
Italian Chicken Casserole
Mexican Spinach Casserole Deluxe

Hope this helps!

Linda Sue's mushroom and chicken casserole is delish! I also like the white castle pie (dont skip the pickles and mustard on top!) and many many more of her recipes!

My favorite so far is the green bean hamburger casserole. It is in the recipe room. I could eat the whole thing!! I am afraid to try the whitecastle because it is raved about and I don't think I could eat just one portion!!!

I also love Linda Sue's site. The Mexican Spinach casserole and Spinach Lasagna are both awesome. Other good ones are tuna "rice" casserole and spicy sausage casserole. Hope this helps!

Not a casserole, but from the recipe room, "meatloaf for meatloaf haters" is really good. It would be good with ground chicken or turkey if the ground beef is not for you. Add a salad or a steamed frozen veggie and you've got a meal. It also freezes well, both whole and in slices.
