Yumo! I am waiting patiently for Trader Joe's organic canned pumpkin to hit the shelves. I love that stuff and will never use another kind again!

Really? I bought a can of that a couple years back and it was gritty, like it had a bunch of the skin or seeds ground up in it!

I went back to good old Libby's after that....

I love pumpkin and this time of year.

My two favorite ways of using it are Sheila's recipe: pumpkin+cream cheese+sweetener+spices (ginger & cinnamon)+microwave until warm then stir.

My favorite cold option is to put some in the bullet with plain almond milk + sweetner + spices. It's so good.

i switch from berries to pumpkin in my smoothies around this time. i called tj's and they don't have it yet, so sad. i bought a couple cans a whole foods and will order a couple cases of organic soon. you can't imagine how fast i will consume that amt. i'm sure i eat 4 cases/year, at least.

MMMMM!! It's pumpkin time! Sometimes I add pumpkin to my hot flaxmeal *cereal*. My kids ask for this pumpkin *custard* type stuff nearly everyday in the fall: canned pumpkin, stevia, eggs, vanilla, pumpkin pie spice, and sometimes cream cheese mixed and baked in the oven in little ramekins. It makes a great breakfast when served with bacon or sasuage.

It's the only canned good I eat! Try a half-can of pumpkin with a 3-oz cube of cream cheese, ground cinnamon & butter to taste, a packet of Splenda, then nuke 30 seconds. Delicious!!

I will most definitely give it another go - I must've gotten the can with the organic dirt in it or something!

Last year I made some pumpkin beignets - OMG they were good - even DH, the "I don't like pumpkin!" guy, couldn't leave them alone.

I think I put the recipe in the Recipes Help forum - will have to look it up tomorrow!

Everything sounds sooo good! I just bought pumpkin spice for my coffee thinking I was on to something.

Is pumpkin low carb.....induction friendly?

I have to tell you that I make Sheila's pumpkin stuff (I think she calls it pumpkin cheesecake on her site, or something like that) and my son loves it. He has since he could eat solids (he is now 2 and 1/2!). I made it the other day for lunch and he said he didn't want it. Then he saw me eating it and ate more than I did! Love the stuff and it is on the induction list--just make sure the can you get is pumpkin and NOT pumpkin pie filling. Read the labels. I always get Libby's--no Trader Joes around here.

Listen to Dawn! For Libby's, this is the one to get:

Not this one:

There are other brands of pure pumpkin, but Libby's seems to be the lowest carb per serving of the ones I've come across. Is the carb gram difference logical and should it matter? Maybe not - but it does to me! It's the only brand I buy.
