Finally, some chocolate
"candy" I feel good about eating! I can't find the original thread, it was that recipe for 6 TBSP opf Coconut oil, 2 TBSP heavy cream, 2 TBSP cocoa powder, 1 TBSP butter, 3 packets of Splenda.
I forgot the butter and used 1 1/2 packets of Splenda. I think I like it--wait, I'll go have another bite to be sure! I may try spreading a little peanut butter on it tonight. Thanks to whoever posted that recipe! Ella5 |

It was beginning to harden as I mixed it, probably from the cold cream. I put it into the fridge to finish cooling--and so that I wouldn't eat it all right away.
The 3 splendas would make it way too sweet for me, and the butter, which I forgot, would probably help cool and solidify it, as well, perhaps, as improving the taste somewhat. I am tempted to add real coconut flavor, not artificial, or even some creamed coconut, a la almond joy bars, in the next batch. (how does one cook shredded, unsweetened coconut?) |

No-no----put the ingredients into a bowl, mix them thoroughly in the bowl, and set them in the fridge. No cooking, no baking, no blender, no microwave, no oven.
Just a bowl-(the one I used holds about a cup and a half), a fork to mix, and the ingredients. Then set the bowl into the the fridge for as long as you can wait. I couldn't waiit too long... lol! Last edited by ella5 : 09-01-2008 at 09:12 PM. |

Okay,
I was just thinking of the thread, "side effects of coconut oil?" and read it. They talk of eating the coconut oil slowly. I've been eating 3 tsp a day off and on for about 10 days, and now I just polished off that candy--which has 6 TABLESPOONS of coconut oil. Am I going to be up all night? Am I going to be alive in the morning? Will I ever want to eat again? Anything? What do you all think? Ella5 who is asking you all to pray for her! |

I do something similar, except that I also add peanut butter and instant ground coffee. This time around I added some butter and it totally killed it. I didn't like it at all. It doesnt help that I heated all the ingredients whereas normally I just do it all cold and then freeze. Try adding the pb! It taste really yummy. I mix some in really well and then in the end I just fold the rest.

It may be sin-in-a-container...I'm not sure yet! Never had anything like it...limited myself to 1/8 of it. Just placed it in the mouth and let it melt a half-spoon at a time. So is there a catch to this stuff? USDA site puts Total carbs for entire batch at 9.6 carbs I cut the marks into the surface with a table knife to make it easier to keep track of how much I've eaten.

If you want a non CO recipe:
the easiest candy recipe I have found is for PB cups. I have been making them for years.. since I started the LC lifestyle. If you keep them in the freezer they are hard, but when I decide to have one I let it sit out for a bit and it softens to a nicer consistency. I use organic butter.. I tweak mine a bit, using half the splenda, sunflower butter instead of PB (allergies) and no walnuts. Quote:

I always use parchment paper too.. then it doesn't stick. And I've never tried it with butter or hwc... I'll have to try that

Hi b lou, Dianna, mina & wj...
Thanks for all the additions, and suggestions. I particularly like the parchment paper idea, because once this stuff sets up it is a bit of work to delaminate it from the Glad container (that can be my exercise for the morning). My wife will love the peanut butter addition. We are still waiting to hear from Ella to see if she survived the night...I suspect she did. |

What brand of coconut oil are you all using?
I tried making this recipe as is and I didn't like it. The oil taste is very strong. Thats why I add PB and coffee to my version. |

I made it through the night!
I was awake longer than normal, seemed to have more energy, and did get up to go a couple of times. ![]() Not so hungry this morning, which was nice. Had a small portion of chicken and mayo, and 5 hours later, am just getting hungry again. I've been busy this AM, and still have lots to do, haven't even started on some things I need to do yet. Thanks for the photo, and I's so glad you like it. Sin-in-a-container--perfect name for it! I appreciate the nutrition info, too. And the recipe tweaks. Ella |

wowzer....I have all those ingredients. My hubby keeps stealing my Low-Carb icecream bars. I will have to make this tonight and freeze it. I am beginning to take on the attitude of a doberman....Growl...stay away from my low carb treats. Eat your regular, ice-cream and cookies!! (The rest of my family are all skinny minni's)
I think I will add the peanut butter. Sounds wonderful. A quick morning snack to get me going. Very little time...usually just drink coffee and cream for breakfast. |

Hi Ella...
Glad you are still with us (never a doubt). My wife loves it and said ''I'll have some of that tonight.'' She's really a milk chocolate fan, but loves hot chocolate too, which this is reminiscent of. The line-scoring I did with the table knife proved to be a good thing. Now that the candy is setup, I can just insert a table knife in the line and apply a little pressure, and it breaks out in little squares (nearly square). The GladwareŽ is letting go of the chocolate cleanly and easily...so I won't be using parchment after all. I will separate and remove them to a ziplock. |

I like the idea of freezing it. Might make it last longer in my household. If they have to wait to let it get soft...they will pass. haha. If you freeze it, is CO a problem? I know that my liquid CO has developed some floaters in my container in my drawer at work. Is that okay?

I match the pb with the amount of coconut oil. If I use 8 Tablespoons of CO I will use 8 Tablespoons of PB. Keep in mind that my CO taste nasty and thats primarily why I started to mix a million things into it. I also use a lot more heavy whipping cream. LOL. I just keep mixing things until i get a flavor that I like. It also depends if I am just eating it as a snack or if I am using it as a meal replacement. Coconut oil *sometimes* takes my appetite away so I try to up the calories/fat to make up for it througout the day. You can pretty much just play with the recipe. Not much damage you can do. I've tried using different davinci syrups as well instead of the splenda.
