Hey Katlj,
If you follow Prozak's method in post #1, you don't whip the egg whites. You buzz em all together in the Magic Bullet or blender. |

oh, cool...i totally didn't "get" the oopsie's when i tried to make them...i was bummed they didn't do much for me.
i love the idea of just throwing everything together and baking. what about oat fiber instead of the coconut flour? |

Are they eggy? That's the reason why I wasn't able to fall in love with oopsies. The egg smell was really over powering and kind of grossed me out. They look delicious though and I actually get a little jealous that everyone else can eat them. LOL.

[COLOR="Navy"]If the ooopsies still seem too eggy, just make a savory version. I reconstitute dried onion and add them along with some onion or garlic powder and 1 tbs flax meal and the rolls are just tasty and great for sandwiches. No eggy taste...I promise!
Or get creative and add some shredded aged cheddar cheese, or parm cheese - all tasty additions. I also agree regular ooopsie rolls take a bit of time (7 minutes for me to whip my egg whites until firm), but I always make a double batch (6 eggs = 12 rolls), and that way I only have to make'm once a week. Glad I have two muffin top pans. [/COLOR]

Hey Prozak,
I made this with almond flour instead of coconut flour. I used 3 packets Stevia Balance (added fiber and chromium). I used parchment on the bottom of the pan. I left out the cream of tartar. 1) The taste was GOOD. 2) It was flat. But it was pretty sturdy. I liked it. Wonder if it needs the cream of tartar, or maybe even baking powder? I think the "fluffiness" of the oooopsies is because of whipping the egg whites separately and folding in, which I'm not very good at. This way worked for me. But it was flat. ![]() 3) The parchment worked beautifully. No sticking. 4) It would make a great rolled crepe, manicotti, blintz etc. 5) I will make it again, maybe with some more tweaking. Hey Prozak!
I used your Flooopise recipe (with my changes) to make "Dogs In a Blanket"! DEEE-LISH! 1) I cooked some organic, uncured all-beef hot dogs in the NuWave oven. 2) I used a strip of Floooopsie bread, spread with spicy brown mustard and a slice of cheese. Then placed the dog inside and rolled up like a jelly roll. 3) I warmed it a bit in the micro - abut 20 seconds. Hubby said it was "AWESOME" and I have to agree. |

I always bake my oopsies in a jelly roll pan and then cut into squares. It is so much easier! I usually add a handful of Italian cheese blend and spices for a savory version. I love making panini’s!
I don’t mind whipping my egg whites because my Kitchen Aide whips them in like a minute flat but it would be easier to throw everything into the mixer in one swoop and not have to dirty another bowl. I will give it a try this weekend! |

Floopsie Chili Dog Casserole
I made this tonight!!! It was so great! Had some leftover homemade beef chili...chopped up additional green pepper, onion, sauteed all in EVOO..added 5 chopped up turkey franks...added chili and brought to a good simmer. Made the Floopsie batter in blender...put chili mixture in a 9x13 sprayed pan...poured Floopsie mixture over all, then topped with cheese. Baked at 350F for 25 minutes. It set up really nicely! DH and I really enjoyed it!!!

I made the Floopsie last night. Followed the original post to a T. Very very very good. Quick and easy. Used my magic bullet, so quick clean up. I liked oopsies, but I had to drag out my Stand mixer, etc. So, for a quick fix...this is great.
After it came out, I also thought what a great base this would be for the Ranch Veggie Pizza I use to always make as an appetizer. (You've all had it...start with the crescent roll and line a cookie sheet, then after that's cooled, cream cheese & ranch, then top with veggies). I'm gonna try that, maybe this weekend. I used my Floopsie this morning to make a breakfast sandwich. It was great. I just sliced a hard boiled egg on it and a pc of turkey sausage. Thanks for sharing...this one is definitely a keeper. I may like this even better than the oopsie! I used 4 eggs, 4 oz cr cheese, liberal parm cheese, minced onion, garlic powder, 2 tsp baking powder, and 2 tbsp flax meal - smells wonderful and the tiny taste I took was yummo. I now have a 2nd batch in the oven!
