Chocolate, Coconut Almond Thins! Wow Kevin!
Man these ARE GOOD!
My hubbie and I made these last night.. first "sweet" I have had in a month and I can't believe how great these were. (I love that he is getting interested in cooking with me.. he is doing so good on LC too!) I used sweetsfree (8 drops) instead of the quick pack (didn't have one) and these were SO easy! Chocolate Coconut Almond Thins -Kevin PA recipe 1/3 cup almond flour 1/3 cup dutch processed cocoa 1/3 cup unsweetened coconut 1/2 tsp. splenda quick pack (or sweetzfree -8 drops - adds no carbs) 1 egg white 1 tsp vanilla 325 deg. I was SURE one egg white was not going to do it but it did.. I had to really mix for a while but it worked. I sprinkled the mix on my silpat in sort of a rectanglular area, put plastic wrap over it and rolled it out on my silpat. put silpat on a cookie sheet and baked in the oven 15 min. I ended up removing (with a metal spatular, good enough edge to "cut" away pieces without hurting my silpat) pieces from the edge and cooking 5 more min, cutting away edges again and then cooking 5 more min to get the center nice and crisp as well. these went quickly.. I totaled the cals and carbs and this is what I came up with: Carbs are NET: Cocoa – 106 cal - 10.6 carbs Almond flour – 180cal - 3 carbs Coconut dired – 170cal - 3 carbs Egg white – 17cal - 0carbs I think these are GREAT for chocolate cravings and I LOVE that it's a fairly small recipe.. enough for two people to really enjoy them.. but glad they are gone this AM! I could easily eat another batch but it's time for another VLCarb day. Thanks again Kevin!
