Chocolate Pots De Creme (Custard)
The easiest way to describe this elegant dessert is that is tastes like the center of a chocolate truffle--firm, smooth, creamy, and intensely chocolaty! Naturally sweetened with erythritol and stevia. Quite easy to prepare, but oh so impressive.

Chocolate Pots De Creme Makes 3 servings Ingredients: 1 cup organic heavy cream **2 ounces 85% percent cacao dark chocolate (Lindt or Green & Black's), chopped 1/2 teaspoon vanilla extract (sub whatever flavoring you like) OR espresso powder 3 large organic egg yolks 5 tablespoons erythritol or xylitol 1/8 teaspoon NuNaturals pure stevia extract (omit if you use xylitol) pinch of sea salt **Cut the chocolate bar into thirds and use of two of them. Just eyeball it. Preparation: Preheat oven to 325 degrees Fahrenheit. Place 3 ramekins in a large roasting pan. Combine heavy cream, chocolate, and espresso powder in a saucepan over medium low heat. Whisk every few minutes until chocolate melts. Stir to blend cream and chocolate completely. Do NOT overheat! You don't want it to bubble up. Powder erythritol in a coffee grinder or magic bullet. Whisk erythritol and stevia into egg yolks until mixture is smooth. Slowly pour the hot cream mixture into the egg yolks, whisking the whole time. Stir in vanilla extract. Divide mixture between the 3 ramekins. If you care enough, use a toothpick to pop the little bubbles that form on the surface of the custards. Heat a measuring cup full of water for a couple of minutes in the microwave, and pour water in the roasting pan until it reaches about an inch up the sides of the ramekins. Bake for 35 minutes. The centers of the custards should still be very jiggly. Remove ramekins from water bath (wear potholders!). Let the custards cool to room temperature. Store them in the fridge covered with a paper towel and plastic wrap for at least 2 hours. ~5g net carbs per huge serving ![]() ![]()

Lauren, this looks divine! Question for you....I have powdered erythritol....how much would I need to sub for the regular and what is the 1/8 stevia equal to? I don't have stevia, I have fiberfit, splenda, powdered e.

Oh Wow!!

Kim, try 9 tablespoons of the powdered erythritol. Then add splenda until it's sweet enough for your tastebuds. DaisyHair, those special pots sounds really cute! Guess that's where the name of the recipe comes from. I'm jealous! |

[COLOR="DarkGreen"]I only have SweetLeaf Stevia Plus-- would it be ok to sub for the pure stevia extract? Are they similar? Getting coconut milk this coming payday so I can try some of my recipes with it, and this is probably going to be one, as it is CHOCOLATE!

Verdict: very good and very rich. I couldn't finish mine which is a record in my choclate-loving life!
It had a slightly crispy coating to it, like sugar . . . I'm thinking maybe it had something to do with condensation and erythritol. It tasted fine and I actually liked the contrast in textures but I don't think it was supposed to do that. |

Lauren, have you tried Rachael Ray's blender version, no water bath needed. Yours looks great!
![]() Rachael Rays, low-carbed: 2/3 cup heavy cream 1 egg 2 tablespoons sugar blend A pinch of salt 1 cup hershey's sf chocolate chips 2 tablespoons Frangelico or dark rum Preparation Heat cream in a small pan over moderate heat until hot, don't boil Using the low setting on a blender or food processor, combine the egg, sugar blend, salt, chocolate chips and liqueur. Pour in the hot cream in a slow stream (the hot cream will cook the egg and melt the chocolate). Process or blend 1 minute, until smooth. Oh man, every time you post something Lauren I need to make it because it just looks so good (and all of your recipes I've tried so far are just fantastic). I've been going a bit overboard on LC treats, but amazingly I haven't been gaining (or losing either though). When the Gooey Pumpkin Butter Cake is gone, I may have to give this a try!

Many, thanks for sharing your experience with this! If you let the pots de creme sit for a couple of days, the erythritol will start tasting a bit crunchy. Mine have always been eaten within 1 day so I hadn't noticed this effect but that's good to know. Glad you enjoyed the dessert!
Brittone, do let us know how the gingerbread turns out! Angie, you definitely want to wait on this one if you're still working on the butter cake because it pretty darn rich!
