Chocolate Chip Cookie Bars
1 cup finely ground pecans and walnuts
1/2 teaspoon baking soda 1/4 teaspoon salt 1/2 stick of butter, melted 2/3 cup of Splenda 1 teaspoon vanilla 2 eggs, beaten SFree Chocolate Chips (1/2 cup or more) chopped nuts (1/2 cup or less) Mix all ingredients in a medium bowl. Butter/pam a 8 x 8 pan and pour in cookie bar mixture and bake at 350 until done. It will take about 20 minutes or so. Cool and serve. I kept mine covered in the fridge. |

How did they taste Carolyn? Would a non low carber find them normal tasting? Where are you able to purchase SF chocolate chips? I tried cutting up SF ross bars in the past to make SF choc. chip cookies but my cutting skills didn't cut it.

Carolyn you and others have such yummy recipes! I wrote to Hersheys asking about the S.F. Baking Chips and due to over welming responds they are BACK I sure the have the dreaded S.A. but they don't bother me. I don't care for walnuts and pecans, their ok, but could I use Almond Flour? I have loads of that. thanks again ![]() |

Andy - when I need to break up sf chocolate bars for chips I put them in a ziploc bag and pound them up with the flat side of a meat mallet. They aren't pretty but, when cooked in a recipe, who cares? Works for me!

Jeri: It looks like your chips melted into brownies. My chips were frozen when I added them cuz I keep them in the freezer. Maybe that's why they stayed in the "chip" form.
Laurie: So glad you liked them. I just finished my last one for breakfast.. Chocolate and coffee..a great combination. I don't know how many carbs are in these. Obviously, they aren't for induction levels...I might guess around 5-10 (tops) a piece..It all depends on your sweetener, as well as the type of chips you use. |

I ran it through my Mastercook program and came up with 5 net carbs for each of 8 servings, not counting the SF chocolate chips or sweetener. The chips I used were the old Hershey's Baking pieces I had stashed in the freezer. They have 1 net carb (excluding sugar alchols) per tablespoon. Figure 8 for a 1/2 cup, and you get 6 net carbs each. I used Liquid Splenda and erythritol for my sweeteners. These were really good!

Well missie you are in there giving us these delicious goodies and
still losing weight. Can't beat that. Now about the pecan/walnut flour, do you purchase this or grind it? I think this would be an excellent combination. I have a Vita Mix and it grinds, but not quite as fine as commercial products. Can't wait to try these. I do miss miss chocolate brownies and things of that nature. Hey redhead, loved the pictures of the two of you and then your family. What a great change in the two of you. Your DH must be very proud of you and himself. Great job!

I made these today, and they were really good! So easy too, you don't even have to break out the mixer. I used Hershey's sf chips and almond flour, no added nuts, and used 1/2 xylitol 1/2 stevia for the sweetener. YUM!

I made them, this time using almond meal and Hersey's SF Chips...oh, man, they were GOOD! I found that the chips sink into the dough (battter, actually), so this time I sprinkled them on the top. Worked great!
