Help! I have to make a low-carb ice cream cake
My daughter wants an ice cream cake for her birthday next week but she is doing low carb. Does anyone have any ideas or recipes for this? I am thinking Carb Smart ice cream (if I can find it locally) but what do I put for the layers? Any low carb cake ideas? Or other ideas? Help!!!!!!!!!!!

What about making her a l/c baked Alaska. Make your favorite l/c brownie in a cake pan and use that for the base of the Alaska. You can then make a mold for one or more of her favorite flavors of l/c ice cream using a mixing bowl about the same size as the brownie. Top with meringue and bake to brown the meringue immediately before serving. (You can put the candles in the top of the meringue)

This is something that was very pretty but it is an american flag. I saw where you can take 2 pints of ice cream you can use two flavors. If you can find low carb ice cream this is best but if not you can use no sugar added.
Spray a 13 X 9 cake pan. Put 1 pint ice cream that is slightly room temperature so you can spread it. Of chocolate. Put in Freezer. Once this is firm layer a second pint of vanilla same as before over the chocolate. Freeze again. Make enough heavy cream into whipped cream and spread over frozen ice cream if you add some s/f vanilla pudding to the whipped cream it will be more like butter cream frosting. You need blue berries and strawberries. In the corner you put blueberries like stars on a flag in a square, then cut strawberries in half and make rows like the stripes. Then freeze again. It is very pretty. But maybe not so much a birthday cake but you could decorate it however you wish.

I use Kevin's recipe for zucchini brownies. I pulse the zucchini in the food processor until it is almost pulp. You can neither see nor taste the zucchini, but the result is a very moist tender chocolate cake. Also I add 1 t coffee to boost the chocolate flavor. I have made this cake many times and it is declicious.

Here is a recipe that I have used as a base for the Baked Alaska. Making it in a springform pan makes it easy to remove the cake from the bottom of the pan.
5 eggs (at room temperature) 2 ounces unsweetened baking chocolate 1 stick butter 2/3 cup almond flour 1 teaspoon vanilla 2 Tablespoons Splenda Preheat oven to 350 degrees Butter the bottom and sides of an 8” spring form pan. Separate the eggs Beat egg whites until stiff Melt butter and chocolate on top of a double boiler In a mixing bowl, combine egg yolks, Splenda, and vanilla. Beat until well blended. Add a small amount of chocolate to egg yolks and stir to temper the mixture. Add the rest of the chocolate mixture and stir to combine. Add almond flour and mix well. Fold chocolate batter into the egg whites until combined. Pour into prepared spring form pan and bake for 20-25 minutes until done (center will spring back when touched) Cool on a wire rack for 10 minutes before removing sides of the spring form pan.

Henry, are you sure that the amount of Splenda is correct? That doesn't sound like enough to sweeten that much chocolate.

I would make a lc cheesecake and top it with blueberry instant ice cream. (recipes for both of these are on my blog).
The zucchini cake sounds interesting. I will have to check that out. |

Thanks for the catch Linda, Even 2 Tablespoons does not make an overly sweet cake. When I make this, other than for a Baked Alaska base, I serve it with a drizzeled chocolate sauce that has more sweetness so the combination of the sweet chocolate sauce on the cake is something I call Chocolate Delight.

Wifezilla! I just bookmarked your homepage! Wow.....great recipes. I love your ice cream recipes. You said you can't freeze it overnight though? Wouldn't it melt if I didn't freeze it?

You make it right before you eat it. It only takes a minute. Of course it will melt if you don't freeze it, but if you do freeze it, it just doesn't taste right...ykwim?

Karen Barnaby has a pretty great brownie recipe using cream cheese. It's much better tasting when it's cold or frozen, so it'd work well in an ice cream cake.
