low carb( less than 5) crock pot recipes...anyone want to share theirs?

I need to get into my crock pot BIG TIME..i have decided my excersise needs to be more ipportant so I need help thinking about meals. BF must have hot meats at dinner and I want to cook something that I can have next day for lunch..any suggestions and if so ..how do YOU make these low carb meals in the crock pot? Thank you in advance

It's not really a meal, but I crock pot chicken breasts to make chicken salad, it's so yummy that way.

Also, I'm not too sure of the carb count, but we have something we call spicy chicken, or spicy turkey, where we crock either chicken breast or turkey breast all day long and put it in a mixture of canned tomatoes, chicken broth, celery, onions, peppers, and southwest spices. I serve it to the family over rice, but I eat it alone. It's very good! I don't have exact measurements, though, we just throw it together!

i am sure if the tomoatos were minimal it could be very low carb..sounds delish. I was hoping to figure 5 or less so I could make meals and know the counts. Everything but the ck=hicken breast sounds minimal in carbs... Thank you for sharing! I might try it next Saturday I am going to make Saturday 'higher carb' days.

waddleon-- Thank you! I am not a huge cauliflower fan generally, but it behaves like potatoes in that dish, and that's the way I like it. It's my favorite chowder, and a little goes a long way.

You can always cook many different types of meats in low carb / no carb liquids, and play with it come dinner time! I've put pork in there and cooked it to death in liquid, and made pulled pork. That works well, and starts with cheap stuff. (Especially with me ) I'm a pinch and dab cook, toss some meat, some liquid and some seasonings in, and there we go. Another meal from The Journal of Irreproducible Results Cookbook... (My kids now ask, "Was this from The Journal of Irreproducible Results Cookbook?" Or they'll tell me about what they cooked from The Journal of Irreproducible Results Cookbook...)

I use my crock pot every week...my favorite recipe:

2-4 pounds chicken breasts, fresh or frozen, dump lots of garlic on top cover with lid, plug in and walk away.

Low carb and I can use it for all sorts of other things if I get sufficiently motivated. But I usually don't.

What can I say? 'm easy to please.

I spend as little time in the kitchen as possible...

One of my favorites is a roast, a can of rotel and then cook. After taking it out I shred it and add sour cream or cheese, etc. Pretty delicious!

Wow. That chowder does look amazing, Cleo. I can't wait until the fall. Not a fan of hot soups/stews unless the weather is at least cool, if not cold.

I have bunches. This spring I was using the crockpot constantly. I got Dana Carpender's LC Slow-Cooker Cookbook and used that a lot. We liked just about everything I tried! I Have A Life Chicken, Orange Teriyaki Chicken, Roman Beef, Chicken Roma, Orange Rosemary Pork Roast...I can't even begin to remember them all, except I do remember that Creamy Horseradish Chicken was a favorite, and I did post it here (or actually my variation of it).

I said this spring I used it just about every night. Now we're grilling almost every night, because it doesn't heat up the house (meaning we'd pay money to be cooking, and then have to pay more money to let the a/c cool the house back down again. In the winter we use the heat from cooking help warm the house).

I'm loving doing joints of beef in there at the moment. I live alone so I can make enough for three, four, even five meals and just freeze it. Rolled brisket is what I usually use, cooked on low for 9-10 hours with just a little water in the pot. Sometimes I'll add some herbs, rosemary is my favourite.

I save the juice that's in there by the end, put some in a little pot for however many servings I have. Then when I come to have some of the beef a couple of days later I'll reheat it with the juices in a small pan. The juice makes it all moist again and can even make some gravy/jus with a bit of stock added.

Another beef fave (beef and my crockpot are very good friends) is some stewing steak, or diced beef, but stewing steak for preference, with a goodly lot of mushrooms, a little onion and garlic and a small tin of chopped tomatoes. Some beef stock (just a tiny amount of liquid if made up from a cube) and whatever herbs I fancy. Or sometimes I use spices rather than herbs and make it spicy beef.

Seal the meat in the frying pan first. Gently fry the onion and garlic and maybe the mushrooms (though I often just clean em and chuck 'em in). Blender the tomatoes - this makes for a thicker sauce. Put everything in and cook on low for 9 to 10 hours. Once it's done, if the sauce is a bit thin pour that into a pan and put it on the stove on a high heat until it reduces and thickens. Or use a low carb thickening agent.

For chicken do you still cook on low for about 8 hours?
I have never done chicken in the crock pot but would like to start.
