They are made with egg and cream cheese. That said, I didn't store mine in the fridge. But they only lasted a couple of days.

Depending on the heat, if they're around for more than a couple of days, I put them in the fridge. HTH!

Oopsies freeze well also. Just put a piece of wax paper between them in a freezer bag. I make a double batch and they last a long time this way. I can eat them at my leisure.

I pile 'em all into a large zip loc bag and store them in the fridge. I have left them out before but they did not last to long before the mold appeared.

So yeah, it sounds like these suckers need to be kept in the fridge. The mold wasn't given a chance to set up shop on my oopsies.

I keep mine on the counter in an unsealed bag and they are ok (I love in high plains desert climate so it's not humid here). Mine tend to go stale. Then I turn them into bread crumbs in my food processor and freeze them until use.

I wrap mine in papertowel to get the moisture and since they are made of egg and cream cheese I HIGHLY recommend you refrigerate them.

I live (and love) in the high plains too, but surprisingly things mold in my house very quickly. It's very dry, so I'm really surprised that things do mold quickly. I think it is the moss rock wall I have in my living room.
![]() Anyway, I can't leave them (or Kevin's bread which I also make) out on the counter even slightly open for very long or they will mold. I have to refrigerate all my low carb goodies pretty quickly around here. So,,, I guess the answer is, it depends on your climate & individual area circumstances.

I make a 12 Oopsie Batch. In the winter I leave them out for the first two days on the counter, and refridge them each night. After the first two days I refridge them in a container with paper towels. They last a good 5 days before starting to go stale on Day 6 and by then it's time to make another batch.
