Coconut flour/meal

Does anyone cook with coconut flour/meal? If so do u like it? I have seen several recipes that call for it, but I havent tryed it.....YET...

I bought a couple of bags of it about a year ago and have not used more than part of a bag. It is a liquid soaker upper and you have to use a ton of eggs to make anything with the flour.

Thus, everything tastes "eggy". I will not buy any again as there are a lot of other baking ingredients that I prefer over coconut flour.

But its good for you so I thought I would try it and see. Do u have any recipes u can share with me? I did get some off the net, but the more I have the better....

Here's my favorite recipe, but I also use it half and half with flaxmeal to make my minute muffins.

I use it to make coconut milk pancakes. . .sooooo yummy! Here's my recipe ( I think it may have come from Bruce Fife's book?? Can't remember, as I've had the recipe for a while. . .):

Coconut Milk Pancakes
2 eggs
1 pkt Splenda
2 T coconut oil or butter, melted
dash salt
¼ tsp vanilla
3 T coconut flour
½ cup coconut milk
1/8 tsp baking powder

In a bowl, blend together eggs, oil, vanilla, coconut milk, Splenda and salt. In another bowl, combine coconut flour and baking powder, mixing thoroughly. Combine dry ingredients with wet to form a smooth batter. Heat 1 T oil in a skillet or griddle. Spoon batter onto hot surface, making pancakes about 2 ½ - 3 inches around.

Here's the nutritional info I get per pancake, using info on my ingredients(fiber subtracted):
1/8th of recipe: 69 cal, 2.1g protein, 6.7g fat, 1g carb
1/9th of recipe: 62 cal, 1.8g protein, 6g fat, .9g carb
1/10th of recipe: 55 cal, 1.7g protein, 5.4g fat, .8g carb

Easy and Quick Chocolate Chip Cookie

--------------------------------------------------------------------------------

This is spin-off of Cali's recipe. I couldn't resist trying a chocolate chip version.

1/2 stick of butter, softened
3/4 cup of Splenda (I used liquid Splenda)
3 Tbs. of vanilla Protein Powder
2 Tbs. flaxseed meal
1 Tbs. coconut flour (you could probably add either more flaxseed or PP if you don't have this)
1/4 tsp. of baking powder
pinch of salt
1 egg
1/2 tsp. of vanilla extract

2 squares of 85 percent Lindt chocolate (chopped into little chips)

In a bowl, place butter, splenda, PP, flaxseed meal, coconut flour and baking powder. Mix well (by hand). Then add the egg/vanilla and beat again by hand until incorporated. Then fold in your little chips of chocolate.

Refrigerate for about 15 minutes until the dough is firmish.

Bake at 325 for 10 minutes on a Sprayed or Parchment lined cookie sheet.

This made 9 cookies...

How many pancakes do you get out of this? I think I am going to replace the vanilla with sf DaVinci coconut syrup. Thank you....

Sometimes 8, sometimes, 9, sometimes 10. . .that's why I've got the nutrition counts for all 3 worked out.

It makes great pancakes and brownies! Type in "coconut flour recipes" and should get hits from the various coconut flour websites with recipes by Bruce Fife. These are wonderful! Everything made with coco flour it is SO moist and substantial. It's perfect for gooey brownies and baked goods you want to have that "heaviness."

There is a thread here on making cheese biscuits with coconut flour. I have not made them but they sure look and sound good.

*bump* Trying coating your chicken tenders in coconut flour, white pepper, garlic, and finely grated mozzarella or parm! They baked up in the oven with a nice coating. Didn't taste coconutty either.

I tried coconut flour for the first time in a recipe (your brownie recipe jacksmixedtape) and I was very pleases with the results. I'm now gonna try other C.F. recipes since I have some now.

jacksmixedtape, would you mind looking at a recipe I posted earlier and see what you think about low-carbing it. It's the Gooey crackled-topped chocolate cookies-which maybe the H.C. flour could be replaced with C.F.

Can you just run some unsweetened coconut flakes through a coffee grinder and make coconut flour?

Bummer. I was so hoping to have coconut flour to make the ooey gooey brownies!
