I'd like some ideas for...

I was wondering about ways to use up some cottage cheese. I bought the 4 percent Daisy brand and I don't like it. I usually buy Land 'o Lakes 2 percent and I love that.

Anyway, could you think of things I could do with it? TIA!

Just curious--

What is it that you don't care for about the Daisy brand, 4 %. Don't recall seeing that brand cc at my stores here.

I use cottage cheese mixed with parmesan and egg in noodleless lasagna instead of riccotta.

I just didn't like the taste of it. I really like the sour cream in the Daisy brand, though, as it only has one or two ingredients.

If you use Dreamfield's pasta, you can blend up the cottage cheese and use it for half the cheese for macaroni & cheese. I generally use American for the other half and use cream also.

It's okay if you mix it with scrambled eggs when they are half done. I like to call them cottage eggs. I also like to add a tad of onion and bell pepper in. I use a heaping tablespoon of cottage cheese per egg.

If you blend it up, you can add it to a cheese sauce also.

I'd make up a double batch of Cleochatra's Cauliflower Lasagna. It is such a good recipe.

Thanks, Nigel. These ideas all sound good. I especially love microwave scrambled eggs and will try that for sure!

I found the Daisy 4% cottage cheese to have a dry taste, so I added my fav salsa for a cold/hot treat that can be used as a dip for veggies. I eat it plain.

I haven't tried anything on the page, but I thought it might be helpful.

After seeing this page, I remember there is a low carb cottage cheese pancake recipe on here somewhere also, but I never tried it.

I do remember that I have a recipe for vegie dip that uses cottage cheese from my low fat days! Your idea looks easy and sounds tastey.

Nigel, a lot of these recipes on the "cottage cheese page" lend themselves to low carb.

I remember seeing a recipe for pancakes also, but didn't find it when I was looking this time.

Okay, this might sound crazy, but you have to try it to know how good it is! I put cottage cheese in my hamburgers--it almost all melts out, but it keeps the meat nice and juicy. You don't really even notice that it's there. I just made some last night, as a matter of fact. I put about 1/3 cup per lb of hamburger. I also season with worcestershire and whatever other spices/seasoning I'm feeling like at the time. Last night I used cajun seasoning and the burgers were YUMMY!

The funny thing is that I never knew that it was weird because that was how my mother always made burgers while I was growing up. It wasn't until I got to college and my roommates saw me making burgers that found out that cottage cheese does not normally go in hamburgers. But I converted all of my roommates because it is just so delicious. You'll have to let me know what you think!!

Ok, this may sound strange, but it's something my mom used to make a lot, and is actually much better than it sounds! Unfortunately, I have no idea as to amounts, so you need to do this to taste, but I've tried to guess. To 16 oz. of cottage cheese, add some finely diced veggies (I usually do green onion, red pepper, green pepper, celery - can do what ever veggies you like You probably need about 1/2 cup, total). Also (and this is the strange part) you need to add chopped green olives. Nothing fancy, just the good old pimento stuffed green olives. I would guess maybe 3T or 4T chopped green olives to 16 oz. of cottage cheese. Mix it all together and enjoy!
