Freezing fresh fruit...
Is there any way to freeze fresh peaches without using a syrup? I'm going to be freezing a bunch of fruit for the kids this weekend and I'd like to do peaches, too but the thought of adding sugar to an already sweet fruit makes me cringe. I won't do it if that's the only way.
Everything online says to pack them in a syrup. I know we don't eat a whole lot of fruit on a LC diet, but if anyone has successfully frozen fruit without sugar I'd love some pointers. |

I have frozen peaches without sugar. You have to use something like Fruit Fresh to keep the peaches from turning a ugly brown though. Just peel, slice and soak them in Fruit Fresh and water. Once they are dipped just bag.

I have a fairly large orchard with many peach trees and freeze them all the time. I use either "fresh fruit" or lemon juice to keep them from browning while I cut them up. Then I either measure or weigh the amount I want and vacuum seal them and then freeze.
No way do you need syrup. You can add whatever sweetener when you thaw them if needed, but most times peaches are sweet enough as is. |

I like to halve and pit, then cut into 4 sections per half, run through some water to which you have added fresh lemon juice - just fill a salad bowl with water and squeeze the juice of a couple lemons into the water, swish around, put in the peaches as you slice - shake off the excess, put them onto a foil or waxed-paper lined baking sheet, not touching each other - freeze til solid, then bag. That way you can pour out as many slices as you want without having to defrost the whole bag.
I do that with all kinds of fresh fruits - whole ones like strawberries, blueberries etc. don't need the lemon juice first, just wash and then freeze. You can even do avocadoes this way!

I also freeze Bing and rainer cherries whole after being washed well. I do this with apricots also and freeze whole.

I haven't personally tried freezing the tropical fruits, but I know you CAN freeze them because you can buy them frozen! Anything that has a tendency to turn brown when cut, I'd do the acidulated water thing.
I HAVE frozen bananas though - you can freeze them whole in the peel (they turn black but not a problem if you're going to use them in baking) and also cut into slices, acidulated, and frozen singly as outlined for the peaches - they're good frozen, like a little bite of banana ice cream! Also good for smoothies and the like. I don't eat bananas any more but when I DID I nearly always had some frozen. |

I knew I could count on you guys. I got a great deal on peaches at Sprouts. .39 a pound. I bought 12 pounds to freeze for Kevin's cobbler. yoohoo

I freeze blueberries all the time but never wash first. Just dump them in a freezer bag, freeze. When you use them pour out what you want, wash and use. No risk of them freezing together and a lot easier.

I buy frozen fruit all the time that has no added sugar or anything else - its nothing but fruit. Its much cheaper that way!
I have frozen on my own cut up bananas (for smoothies), nectarines, mangos, and cut up strawberries. I just cut the fruit, put it in a ziploc bag, and stuck it in the freezer.\ Bananas will last only about 2-3 wks, before they start to go brown. But everything else lasts fine for me. |
