Wine Sub

we don't drink wine so what do you do when a recipe calls for wine? The people on the cook shows always say don't use one your wouldn't drink, well there lies the problem! Anything you can sub?

It depends on the recipe, but you can just sub any other liquid - beef or chicken stock, water, etc.

Just out of curiosity, why not just use wine? You don't have to drink it too....

When recipes call for wine I just use cooking wine. I know some people say they're not as good as drinking wine but I find you get the flavor you're looking for. I use white, red, marsala and sherry - they all work fine for me! (And no, I wouldn't drink cooking wine!)

Choose the substitute considering the sweetness of the dish

White Wine substitutes in recipes
Apple juice or carrot juice.
Vegetable stock or Chicken stock straight or with a little white wine vinegar
1/2 cup rice vinegar and 1 tablespoon white grape juice.

All the alcohol doesn't cook out and for many it's principle - no alcohol allowed - for example, I wouldn't add wine or beer, as I normally do, to a pot roast if I was cooking it to serve to a recovering alcoholic. Just not a good idea!

You COULD buy the non-alcoholic wine and use that too I guess, for the flavor, although I never found any of those to be very good for drinking purposes and I usually follow the "don't cook with it if you wouldn't drink it" rule!

i thought that too until i read that link. apparently not all the alcohol cooks out, sometimes, 80% remains - that was news to me.
i had a friend who couldn't have even cooking wine in the house.
also, alot of times i either don't have wine on hand or wine that i'm willing to use in cooking with...

That's a great list. You can also use club soda for a beer substitute in recipes like batter.

Wow..what a great list..However, unfortunately, lots of sugar in some of those juices..but sometimes you can buy the reduced sugar in some of those juices..

Even non - alcholoic beverages has a very small amount of alchol (1-4 %).
I had a friend that had been on the road to recovery for several years and tried an oduuls because it was"alcohol free" it set her off on abinge for several months before she got under control.she later found out that there was a very small % of alcohol in the product. For this very reason I don't cook with it if she is coming over for dinner. Just don't want to take the chance of setting her off again.

This is from the Ariel non-alcoholic wines website, can't speak for any other brands:

Do ARIEL wines contain any alcohol?
"It is physically impossible to remove 100% of the alcohol from a fermented beverage. The legal definition of a non-alcoholic beverage requires a product to contain less than 1/2 of 1% of alcohol. ARIEL non-alcoholic wines contain less alcohol than most fresh squeezed orange juice!"

Thank you Char for correcting my persentages, I still know for my friend that she still can,t drink either wether it is the taste or the minimal alcohol I do not know . How ever I don't want to be what causes her to stumble.

Hey Rachel, I wasn't trying to correct you, just get the info out here so everyone can make their own choices!

Most beers in the US are 3% alcohol - not the non-alcoholic varieties, obviously!

I have a stepbrother who is a recovering drug/alcohol addict and he drinks the O'Doul's, which is why I went to their website just to verify whether or not there was indeed residual alcohol in that brew.

And yeah, it might well be the taste with your friend - I can see how that would set ME up to want more - like eating a panful of brownies, whether they were sugarfree/LC or not would be for ME!

Has anyone ever come up with a good substitute for wine and kirsh in a cheese fondue? I've tried chicken stock and diluted apple juice (not together), and didn't really care for either one. I tried a little DaVanci black cherry for the kirsh, which might be okay if I came up with a good wine substitute too. Maybe the vinegar and grape juice. Seems kind of weird though.

I use a little kombucha for marinades and spaghetti sauce. It's great.

I was reading that if you just want wine for cooking, that the collapsable bag in a box keeps the wine fresh better than a bottle.

My hubby does not consume any alcohol whatsoever, so I always substitute with either chicken or beef stock/broth anytime a recipe calls for wine. Works fine.

This might be a silly question, but if you use something like apple juice for cooking with, do you think any of the carbs evaporate out during cooking to make it less carby?
