Best Ever Low Carb Milk Recipe for CarolynF

Carolyn, you were kind enough to find me the link for protein cookies the other day, so I thought I would share this awesome recipe for low carb milk with you. I saw on another thread you are interested in alternatives to the Countdown milk.

The recipe originally came from the Low Carb Luxury website, but when low carb milk was in it's heyday, the site owner, Lora Ruffner, took it off her site and never put it back up. Too bad. It's the best recipe for a low carb milk I've run across yet.

Here it is. Enjoy

Take a quart of half and half. Mix with equal parts cold water+ an extra 1/4 cup. (use good bottled water). Add a teaspoon of Splenda (replaces the lactose). Mix well and chill overnight. It will stay fresh for 3 - 5 days.

If you liked your milk "skim" before going low carb, you may want to add more water. If you liked your milk "whole" try making it with 1/2 heavy cream and 1/2 half and half. The mix above approximates 2% milk.

Carb Count:

Made according to primary directions will run you 4 to 5.5 grams carbs per
6 - 8 oz. glass. If you make it with half cream you can get the carbs down to about 3 grams per glass. Ditto for making it in the "skim" version.

Like I said, I can't take credit for this recipe, but Lora Ruffner of Low Carb Luxury can! This tastes exactly like real milk. A good recipe considering I've heard Carb Countdown milk is being phased out.

This recipe is so good I hope the admins give it a sticky for easy reference.

Hi Joycelyn: Thanks for that quick and easy LC milk recipe. I have been using one that I make with powdered milk/cream/water/splenda and salt and have been very pleased with it.

This one sounds like it would be very rich..much like whole milk.. Thanks for sharing.

Thank youuuuuuuuuuuuuuuuuuuuu !!! They have completely phased out Low Carb Milk anywhere within 100 miles of me.. and I grabbed the very last one in our WalMart last week.... I love this stuff....

This sure is a major blessing to me... and I cannot begin to thank you enough...

This is pretty cheap to make cuz you add the powdered milk..

You're welcome! I'm so glad I held onto this recipe. Truly, it tastes just like milk to me; I can't tell the difference. I too loved the Carb Countdown Milk. Then they changed the name to Calorie Countdown, then the stores just stopped carrying it! What a shame. At the height of the low carb diet frenzy I recall at least three brands of good low carb milk out there on the market in the early 2000's.

You can play around with the ingredients and make it as rich or as thin (nonfat milk) as you like; that's the beauty of this recipe.

Carolyn, your recipe sounds good indeed! We need some good low carb milk recipes. As far as I'm concerned, heavy cream diluted with water (which is what most milk substitutes are) just don't cut it with me. Glad you have a good recipe too.

P.S. UNSWEETENED (not regular!) soy milk contains between 1 to 3 grams net carbs per cup. Some brands I can think of are Silk Unsweetened Soymilk (in the refrigerator section), and Trader Joe's unsweetened soy milk in asceptic containers (not refrigerated). To me these aren't bad at all and will do in a pinch for tea, etc.

I really enjoy the unsweetened silk. But they stopped selling it where I shop. I haven't tried the TJ's brand yet.

I have to agree, I have tried many recipes, but really do like the water and half-and-half / heavy cream mix. To me, it tastes the closest to milk. Only wish the shelf life was longer.

I stopped by TJ's today and picked up a carton of Westsoy unsweetened soy milk and Blue Diamond unsweetened almond milk. They were both only 1g per cup, which was less than the TJ's brand of soy milk. I'll let you know how I like them.
