ok...just read through a bunch of the thread and I think I will cut back to 1/3 c butter and add another tablespoon of protein powder. These remind me somewhat of jello cookies that I had as a child.

Which recipe did you follow exactly? There's about 27 in here at least...and we've found (if you read through some of the back posts) that the type of protein powder makes a diff, too.

I find I have to have them really cold before I bake them. Also, I use baking powder instead of baking soda.

I went through several recipe changes to get the cookies to work. For my whey protein concentrate, the following recipe is best.
Kool-Aid Cookies
1/4 c coconut oil or butter
1 egg
1/2 t baking powder
1/2 t baking soda
1/4 cup whey protein concentrate
3 T flax seeds, then ground
1 envelope Kool-aid
1 cup sweetener ( I use 1/4 t liquid sucralose)

I needed to decrease the fat considerably and add flax to get them to stay together. I like to make the dough, and let it sit at room temperature for about 10 minutes. By then the coconut oil has solidified again. I put teaspoon sized dollops of dough on silicone mats and bake. I get approximately 30 cookies from one recipe, thin and crispy. You can refrigerate the dough, and the cookies will be rounder. We like the crispy ones.

I forgat to add that I usually also put in 1/4 cup of erythritol, measured then ground.

I made these last night using a whole pack of lemonade kool aid. Also, I added dried unsweetened coconut and put the whole thing in a 8 inch round pan. Tasty

oh and didn't use the E as I'm out of it.

I gotta make more of these, forgot about them until somene mentioned the kool aid cookies in a protein powder thread

and I'm still outta E and will be till another payday so will it the same way, in a round pan. I like the lemonade ones a lot, tart.

Soobee, I made these cookies following your recipe exactly today. I made the lemon-lime flavor and they are wonderful - light and refreshing, crispy and GREEN LOL! They'll be perfect for St. Patrick's Day

(Also made yet another batch of your coconut ice-cream. I'll always be grateful to you for sharing THAT recipe!)

Julie, I just ran to the pantry and looked at mine. It just says Whey Protein - I got it in the pharmacy section of my grocery store. It's flavorless with 1g carbs, 1g sugar and 18g protein. I'm not really sure what 'concentrate' is, but I'm pretty new to all this stuff. I try to have a smoothie once a day, alternating between the whey protein powder and some egg white protein powder I have.

Looks great! I'll try it soon! Reminded me of this non-LC recipe...

COOL WHIP COOKIES

1 cake mix (any flavor)
1 (8 oz.) Cool Whip
1 egg

Mix together, drop on cookie sheet (drops of about the size of a walnut). Bake at 350 degrees for 10-15 minutes. Please note: 3 ingredients are all that's needed.


BUT if you can find a good LC cake mix, these would be just as awesome as the real thing too.

Malapert, thanks for the recipe. Please read the list of ingredients on the Cool Whip and the LC cake mix. Many long term LC people here probably wouldn't make these cookies
