In need of homemade protein bar recipes!
Hi.Our wonderful ,amazing NonStickPam, who is my thyroid goddess
, has suggested I get off of Balance Gold bars because there may be too much soy in them even though they have whey protein, etc. Does anyone have recipes for making protein snacks that can be brought to the office? I like chocolate, PB, whey protein, do not want to use oatmeal or other grain. Have Jay Robb Protein powder and Bryd Mill Peanut flour. There's a fridge at work, but if anyone has any idea for baked ones that can sit on my desk, even better. Thanks and have a great holiday!!!!

Peanut Butter Protein Bars
¼ cup butter ½ cup peanut butter (pref chunky) at room temperature 4oz cream cheese, softened 1 ¾ cups vanilla flavored whey protein powder 1 Tablespoon vanilla 2 tablespoons Splenda ½ cup chopped peanuts 1. Melt the butter (a microwave works well for this), and add the peanut butter and softened cream cheese to it. Mix together with a spoon (no need to drag out a blender or mixer), and then add the protein powder, vanilla, Splenda and peanuts; stir well. (It will be very crumbly) 2. Taste and see if it is sweet enough. If not, add a little more Splenda. 3. Press the mixture firmly into an 8x8 inch pan. Slice into 12 pieces and put the whole pan in the freezer. Remove when the bars are firm. Yield: 12 bars, each with 9 grams of carb, 1 gram of fiber, for a total of 8 grams of usable carbs and 31 grams of protein. *For storage, it’s a good idea to package these in individual zipper –lock bags in the freezer.

I can't stand peanut butter. I keep trying to like it, but just can't do it. My son and his gym buddies love those protein bars though. They are very easy. I keep them in the freezer and he grabs them and goes. Hope they work for you!

My DD loves these. It looks like a lot of ingredients, but it mixes up quickly in one bowl with no mixer needed, requires no baking, and they are very satisfying as a snack.
Chocolate Protein Bars 2 squares unsweetened chocolate 2 TAB. coconut oil 2 TAB. heavy cream 1/4 c. natural peanut butter 1/3 c. sugar equivalent (I use a combo of Splenda QP and Stevia Plus) 1/2 tsp. vanilla extract 3 TAB. sugar-free maple syrup (If you don't have this, you could probably use additional Davinci's. I'm not sure how crucial it is for holding these together, because if its stickiness.) 2-3 TAB. Davinci's syrup of choice (French vanilla is good) 3 scoops (1 cup) of your favorite whey protein powder (I use vanilla) 1 cup nuts of choice, (I use sliced almonds) 1/2 c. unsweetened coconut 1/4 c. flax meal Melt chocolate and CO in micro for 1 minute. Stir well. Add peanut butter, cream, and sweeteners. Stir well. Add syrups, vanilla extract, and then all your dry ingredients. The mixture will be stiff, but try to get everything incorporated. I just dump out the mixture onto a piece of plastic wrap and shape it into a flat log, about 8"x 4 1/2", which I chill, then cut into 16 smaller 1/2" wide bars, of about 2 carbs each. They end up being about the size of a biscotti. (I then like to cut the little bars into individual bite-sized nuggets. Makes me feel like I'm getting more, KWIM?) You could form it however you like, or in mini-muffin tins, etc. If you try these, let me know what you think!

I just made a new batch today and I didn't have enough almonds, so I used macadamia nuts that I put into a plastic bag and pounded gently with a meat mallet to break up. Yummy! I might use all macadamias next time!

I don't see why not. When cold, cream cheese is even firmer than peanut butter, and they're both high fat. I would soften the CC, though, so it incorporates well. If you try it, let us know how it works.
