Thanks....Had to save it to favs or I'd never find it again. Your recipes and the photos look amazing. I don't think I've opened up one yet that wasn't mouth watering. The cruellers just about sent me straight to Krispy Kreme....but better yet...A stop at the grocery to make sure that I have the ingredients for your version is a better idea.

I also noticed your stats....that's pretty amazing too. Was that really your start weight?

I think I noticed a snow cone machine in one of your photos....that's one of my fave small kitchen appliances.

I do want to compliment you on a wonderful blog. There is a lot of information out there and I see a lot of similarities to things that are important to me. I also use stevia quite a bit...Too much Aspartame gives me a headache...so far..Nutrasweet doesn't seem to affect me, but I think the Stevia is better for me.

I would be interested to know your absolute fave recipe...I wanna try something new and everything out there looks good....overwhelming...LOL.

Dee - you don't need to clutter up your bookmarks with links to threads that interest you.

All you need to do is to click on the "Forum Tools" at the top of the posts (2nd from the left on the right side), then click on subscribe. Choose whether or not you'd like to be notified via email of new posts, then click subscribe on that page.

When you log in to LCF, if you click on the User Control Panel (near the top, left side of all LCF pages, under the LCF logo), that will bring up links to every thread that you've posted on or subscribed to that has had posts since your last visit to that thread. No recipe thread would be complete without a mention of Linda Sue's website. She has compiled and developed one of the most comprehensive low carb recipe collections that I have ever seen. And, they are ALL delicious, at least the many that I have tried. You can find her site by googling "linda sue recipes" or go to the recipe help and suggestions thread where she posts. Her link is in her signature.

Cleo and Linda Sue make this WOE delicious. I never feel deprived.

Big thanks for the Oopsie recipe, Cleo. I don't think I could start my day without my Oopsie with peanut butter!

Thanks for being so sweet! My kids are all autistic, so we're really trying to find replacements for most things. That's not to say we haven't had our share of bombs. I set the oven on fire one day and made something that smelled great and tasted like butt. It was fairly depressing, but it's all a learning experience!

That was my start weight as of January 1 of this year. I lost the first 50 pounds in about 10 weeks!

Thank you for the very kind compliment regarding my blog. I've got some exciting things happening right now and hope to delve more into health as opposed to donuts--though there will be more donuts. Oh yes. There will be...

I bought some stevia today and am so excited to play with it! We have some great organic stores around these parts, and I am too cheap to pay shipping and handling, so scoring some stevia was huge. I bought the packets and the vanilla drops (most things I add vanilla to anyway, so I'm going to try this stuff).

My absolutely favorite recipe is the cauliflower dough lasagna, but I have to admit I have portion control issues with it. For that reason, I either make servings in ramekins, or I let the lasagna cool and then slice it, wrap it and freeze the individual portion sizes, defrosting only as needed. My kids totally love the lasagna too, so that helps with portion control, since they eat it pretty fast. It's been a huge hit, and is pretty easy to make. I like that I'm able to get more veg in there undetected, too.

Right now I'm making some pizzas with zucchini crust. I love making the calzone, too.

kpholl-- I agree! Linda Sue is incredible. She's always paid it forward to others, and has been a consistent resource. I love referring people to her website and her recipes!

Kevin rocks my socks, too. And NancyElle. We are so blessed to have so many talented cooks.

And, in case it's confusing, this isn't a "cleochatra thread". This is a kitchen talk thread about food in general, and things we might be trying or wondering about. I just wanted to chat with Dee about food, but everyone is totally welcome to come on in.

I have visited Linda's Sues site before. But I think the time that I spent there was in her kitchen gadgets section. I'm a kitchen gadget junkie....LOL.

My newest purchase was a NUWAVE oven...which I absolutely love. Makes the best jerky....I have a commercial food dehydrator and it doesn't touch what this oven does.

Judging by some of what I have read, I could be a lot more creative with the foods that I eat. I thought I was pretty talented with my smashed cauliflower that everyone always ask me to make....I had no idea the other things that cauliflower would be good for.

I love jerky! I am going to have to check that oven out.

The cauliflower pizza (etc) was a total fluke. I was really jonesing for some old favorites but with things I knew I should use instead of the gluten. So, I was looking through an old college cookbook a few of us put together, and one friend had a gluten-intolerant son. She had a recipe for rice pizza. Now, obviously, we can't eat rice, but I know we can eat cauliflower. I went into the kitchen and came up with the cauli crust. Now I also make the crust with spinach or zucchini as well.

Long story short: If there is a food I miss, I make a low-carb version of it to keep me from eating off-plan. I'm also finding that I don't miss bread since I have oopsies, and I'm not missing pizza now that I can have it!

I remember that every time I ate off-plan it was due to missing something I always felt was forbidden. I refuse to feel like I'm missing out.

Jumping in here - Dee, how does the NuWave handle the fozen blocks o'meat? I have a healthy distrust of As-Seen-On-TV stuff, having been burned many times. (Except that I still want the Thunderstick, because who wouldn't want a hand blender that plays AC/DC!)

My co-worker gave me the technique for a Rhubarb Pizza - she lays sticks of uncooked rhubarb on a pizza dough, sprinkles it with SF Strawberry Jello powder and bakes it. Would this work with a zucchini crust with a touch a Splenda (or the sweetener of one's choice) added? It has potential!

Dee, would you mind posting your smashed cauli recipe? There are lots of them out there - mine has cream cheese, a little salt, a little butter, some granulated garlic, and a bunch of coarse grind black pepper. And of course the cauli!

I mix it up using my stick blender - makes it very smooth.

LOL--I'm seeing that the oopsie rolls are a must do...I'm off work tomorrow...I may give them a shot.

Violet--I love the Nuwave. I take frozen chicken and put it on 6 minutes each side. Comes out wonderful. I haven't tried it with a whole chicken. I've only had it about a week. I ended up buying it because everyone on another thread was raving about it. It turns out they were right. I too am skeptical, because I can be talked into just about anything and have a lot of shelves of products to prove it. LOL.

Smashed cauliflower.
1 bag frozen cauliflower --cooked
1 T of Hellman's light mayo
1 wedge laughing cow cheese....any flavor
2 T of Ragu Double cheese sauce.
2 T of turkey bacon bits (if I'm feeling froggy).
1 t of spray butter
a little garlic salt, salt & pepper....

I mix it up in my Magic Bullet...usually takes two batches...then stir it all together in one big bowl.
That's it.

If you guys don't mind....if you do...just disregard......(it's a little on food topic--LOL)

Do you mind telling me what your average calorie/fat/protein/carb counts are by the day? It seems like the average weight loss stats are really similar to mine. I'm curious as to whether the counts are similiar to mine and it's just the difference of the foods that we include/exclude from our diets.

Sorry, don't want to be invasive...but curiosity has me thinking.

Well for the foodie discussion, today I made oopsies (sweetened with Stevia) but then put 1T of Jok n Al lemon curd in the middle and spread a little icing on the pastry part...oh yum! The icing was one of Kevins recipe..

Next time I might put a little cream cheese in the lemon curd and skip the icing..

And I prefer the oopsies made with some ground golden flax meal..makes them a little sturdier..

Cleo..just go slow with it cause it can be bitter. When you taste it from the dropper, its terrible..but mixed in with stuff its a lot milder than other sweetners..dont know how it tastes from the plant itself..but you can fill us in on that..

I'm not even doing Low Carb and I LOVE Cleo's Oopsies!

(I do controlled carb + HIGH fiber)

I love them for making desserts - I created the Boston Cream Napoleon Oopsie (can't find the link right now) and fed it to my Diabetic friends and they (and I) pronounced it wonderful!

I have since made oopsies for Strawberry Shortcake, Layered Jello Cakes and just recently a little mini wedding cake for my diabetic sister's 6th anniversary -



It was a very big hit

That's cream cheese, Splenda and whipped cream frosting.

cleo glad you like Stevia. I'm one of those folk that are sensitive to the bitter chem in it and even at 94% pure I can taste it.

Dee I did Atkins DANDR 2002 and helped nudge Cleo from the dark side to clean Atkins back and boy has she blossomed as an Atkineer since then.

I was eating about 4000 cals when I started cause I was sure Atkins would not work but I was going to test it to the max. I was hooked when on day 14 I was back in the 200s and not hungry eating food I liked in amounts i liked.
As my appetite dropped and I feed only my hunger at each feeding by month 4 I was eating about 2200-2500 cals a day in the Atkins induction 65% fats 30% proteins and keeping my net carbs ( total minus fiber) under 20 and still dropping weight like gangbusters. I passed 100 pounds lost just after Christmas 2002 and moved to OWLclimbing the carb ladder and discovering I could eat lots of low glycemic carbs and keep losing weight. Naturally the rate of loss slowed, but on the one yr anniversary of starting Atkins I had gone from 313 to 184 pounds. I was in better physical conditon too as my treadmill speeds had gone from 2MPH and only 20 min to over 5MPH and 60 min with the incline up too. I was doing the BFL lifting program and had energy to burn. By the 15 month mark I was down it 174 pounds and eating slightly less then 60% fats still 30% proteins and over 100 net grams of carbs a day and my cals were back up over 3000. Of course I was working out 2 hours a day too lifting and HIITing.
Now I'm maintaining and because or life issues not able to workout as much so I had to lower my food intake and carbs backdown to 45 net on days i don't HIIT and the cals run between 2250 ans 2500.

Dee I hope as you try out Cleo's recipes you can see that eating healthy fat isn't what makes us fat.
