Anyone have a bran muffin recipe?

I have really been craving a bran muffin recently (I walk past some beautiful bran muffins at a local market and feel wistful)--I noticed that the quaker wheat bran is 3 net carbs per 1/3 cup--has anyone made a LC version of Bran Muffins? I suppose chopping up a few raisins might work--and subbing something for applesauce might work, but there are better brains than mine for tweaking on this board!!

These are adapted from Jennifer Eloff's recipe.
Zucchini Bran Muffins
1 1/2 cups bake mix
1 cup wheat bran
3 T sweetener
2 t baking powder
1/4 t salt
1/2 cup Calorie Countdown milk
4 T melted butter or coconut oil
4 T lc maple syrup
1 t molasses
1 egg
1 cup grated zucchini

Mix dry ingredients. Mix wet ingredients. Stir together. Bake at 400 degrees for 15-20 minutes. Makes 12 muffins.

No. It would depend on the bake mix you use. Also, I always figure my carb counts out by hand. I suppose someone else might be able to enter it for you. Were you thinking of using Kevin's bake mix?

My Bran Muffins. Linda did a carb count once??

LOW CARB SUGAR FREE BRAN MUFFINS
Barbo’s

Servings | 12

Breakfast | DON'T OVER MIX

Ingredients

1 cup 100% Bran Cereal
1/2 cup boiling water
1 tbs. vanilla extract
1-cup buttermilk (Sour Low Carb Milk) for less carbs
2 eggs
1/3 c. oil
1 cup SPLENDA No Calorie Sweetener
1 tsp ground cinnamon
1 cup CarbQuick
1 tsp baking soda
1/2 c. walnut or pecan pieces
Peel of one large orange



Instructions


POUR BOILING WATER OVER BRAN.
LET SIT 5 MIN. MIX FLOUR
AND ALL DRY INGREDIENTS TOGETHER, SET SIDE. IN SMALL
BOWL MIX BUTTERMILK, EGG AND OIL. POUR EVERYTHING OVER TOP OF CEREAL AND MIX UNTIL
JUST INCORPORATED. BAKE 350 FOR ABOUT 15-18 MINUTES


*I USED THE PEEL OF ONE LARGE ORANGE
