Creamy Cheese Soup

I add cream cheese, havarti and cheddar cheese to some chicken or veg broth. I don't measure anything but the cream cheese for carbs (the other are 0 carb cheeses). I stir until it's all smooth and creamy. It's the perfect base for adding stuff to. I usually like mine with spinach and some grated garlic, and maybe some chunks of grilled chicken if I want something more filling. It's such a comfort food. Nice and thick and makes your mouth stand up and take notice!

Here you go!

1 egg
1/2 tsp SF vanilla extract
1 Tbls heavy cream
2 Tsp cocoa powder (note: I use Wonder Cocoa)
5 pk Splenda
1/2 Tsp baking powder
1 Tbls softened butter

You just whisk everything together until blended.
Transfer the mixture to an oversized mug that has been sprayed with non-stick cooking spray
Microwave for 1 minute.

HB's Favorite Breakfast ~ Egg Cream Frappuccino

3 organic free-range/cage-free eggs (fresh!)
8 oz coffee (brewed strong & chilled overnight - or you can make & use coffee ice cubes!)
1 scoop Jay Robb's whey protein powder (chocolate or vanilla or strawberry)
1/2 cup Aloe Vera Juice
1 Tbsp Torani SF syrup or DaVinci SF syrup (french vanilla or chocolate or any flavor you like!)
1 Tbsp Organic India Psyllium Husk Powder
1 Tbsp Local Bee Pollen (for allergy relief)
2 Tbsp organic heavy cream
2 Tbsp organic extra virgin coconut oil (melted)

blend/froth eggs first; add cream and blend/froth again
(makes it fluffy!)
add the rest of the ingredients in the order above; add melted CO last

Enjoy!

Oh, man - little things make me so happy - and this little cheesecake treat is really going to be a nice thing to eat everyday! I cheesecake but know that the real stuff is just loaded with fat and calories. Plus, I do cook a little - but don't always have the time to bake myself a low cal/low fat cheesecake!

I just thought of another idea - maybe if you need a little more protein or are having the cheesecake as part of a meal or snack - I think I'm going to try adding protein powder to it too. I really LOVE my blended protein shakes - but it would be nice to just blend together something even quicker like the little cheesecake treat!

My favorite things right now:

Fried Cheese Tostado
Cauliflower (Cauliflower Salad, Mashed Cauliflower)
LC Nachos (Pork rinds topped with shredded cheese and can dip in sour cream!)
Brisket (I've been cooking a TON of that lately!)
Shredded Pork (Lasts forever!!!)
Hamburger Patties (I found some with roasted onion... add a little ketchup and it tastes just like my meatloaf!)
Big Mac In A Bowl (Great for killing that fast food urge!)
Salads (I've discovered that the fast food salads are actually really good!!!)

I'm in a phase where I'm experimenting with recipes and those are my favorites so far.

Also, I love garlic and olive oil roasted asparagus...
And mushroom alfredo tofu shiratake noodles ( the angel hair kind)
Low carb is truly the way to go for a food lover like me.. everything I eat is so rich and delicious, and it's hard to believe I am gonna keep losing weight eating these wonderful things.

I'm keeping it simple right now, but what an awesome thead!

I make a lot of variations on the hamburger/veggies/sauce theme - hamburger is the cheapest organic meat.

I almost always use onion & fresh garlic, then make it asian with lots of fresh ginger, bok choy or brocolli or cabbage, soy sauce and sesame oil, or make it italian with canned tomatoes, or or eggs and parmesan & spinach, or stroganoff with mushrooms & beef broth, or mexican, etc., etc. you get the idea
