The next time we fire up the fire pit...I am going to make LC s'mores by using the LC waffle cookies and SF marshmallows from Netrition and a square of 85% Lindt chocolate.

I made this at a dinner party we had not long ago, and it was a big hit among everyone, including me lol since it was the first time I ever made it. It's a great italian dessert.


Chocolate Zabaglione

1/4 cup whipping cream, or heavy cream
3 tablespoons unsweetened cocoa powder
8 large egg yolks
2/3 cup splenda
vanilla flavoring
1 pound fresh strawberries or raspberries, hulled and quartered ( marinated in sf vanilla syrup).
Bittersweet chocolate shavings, garnish

Whisk the egg yolks, splenda,, vanilla flavoring in a large glass bowl until blended. Set the bowl over a saucepan of simmering water, but do not allow the bottom of the bowl to touch the water. Whisk the egg mixture over the simmering water until it is thick and creamy, about 4 minutes. Remove from the heat, beat in the cocoa until smooth.

Whip your cream.

Layer zabaglione , berries and whipped cream.

Garnish with bittesweet chocolate garnish is desired.

just posting our most favorite recipe for scallpped turnips...it's one Dottie posted here years ago (with a tweak or two). in case Betty doesn't get back here, you'll have one to try!

Scalloped Turnips w/Caramelized Onions

4 large turnips; peeled and cleaned, sliced into thin slices and boiled
for 3 minutes in water with 3T cream added; drained well
2-3 slices bacon
1T butter
1 large onion sliced into paper thin rings
1/2 cup heavy cream
1 cup shredded white cheese of your choice (I use smoked gouda; Dottie used asiago)
Additional 1/2 cup cheese for top(optional)
3T butter
1/2tsp salt
1/4tsp pepper
1/8tsp nutmeg

Preheat oven to 350. Spray a 2 quart casserole with cooking spray and set aside.

Dice bacon and fry until crisp. Remove with a slotted spoon, leaving drippings in pan. Add 1 T. butter, nutmeg and onions. Saute onions over low heat until nicely browned. Add the bacon back in. Set aside.

In a microwave safe cup, melt the 3 T. butter and then add cream and cheese. Stir to melt, heating for 20 second intervals as needed.

Place 1/2 the turnips in the bottom of the casserole dish; then salt and pepper the turnips, followed by 1/2 the onion mix and 1/2 the cheese sauce. Repeat layers then top with additional cheese if using.

Cover well and bake for 30 minutes. Uncover and bake 15-20 minutes or until top browns and it's all bubbly and tender.

Best holiday side dish. Ever.

Mmmm - mushroom cream sauce on a chopped steak!

sliced mushrooms sauteed in lots of butter & fresh minced garlic with salt & lots of fresh ground pepper
remove mushrooms & deglaze pan with white wine or chicken stock & cook down a little
add some heavy cream and cream cheese and blend well and then at the last minute add sour cream. Add mushrooms back in and stir well. Pour liberally over chopped steak and put a little freshly minced parsley on top. Edible orgasm...

I made Hamburger Helper for the family and set aside some browned ground beef for myself.

I topped it with cheese (melted beef and cheese in micro for 1 minute) and added 2 tbsp salsa and sour cream.

YUM!

Tish, yes, just add the cream to the water you're going to boil the turnips in. The cream helps remove the "bite" from the turnips--makes them more potato-like.

My favorite is cream cheese melted with Splenda added. It reminds me of cheesecake pudding. My sister likes to add coco to hers.

I love ribeye steak cooked outside on a charcoal grill. With fresh green beans cooked in a ziploc steamer bag with butter, salt & pepper.

I'm jealous because you all sound like great cooks with fantasy recipes. I've always been a hurry-up-and-get-something-on-the-table cook. I have been a working single Mom up til last year (when I remarried) so our meals were as simple as possible. Thanks for sharing your recipes, I'll try some of them!

Anyone have the Jalapeno popper recipe?...Can you share it and is it good?

lower carb almond joy truffles... I don't have exact measurements except for the almond meal which I measure carefully to 1/4 cup (due to the calories 138 and carbs 3)

1 or 2 gc scandanavian bran crisps ...soak in a couple of tbsp of chocolate almond milk sweetened with chocolate stevia or chocolate davincis
I soak these until they are kinda mushy. They can be omitted but I like adding them because it really increases the quantity for only 16 calories

1/4 cup almond meal
1-2 tbsp unsweetened dried coconut
1-2 tsp cocoa
few drops of coconut extract (can omit but gives it a nice coconut flavor)
1-2 tbsp of walden farms caramel sauce OR greek yogurt
sweetner of choice (german chocolate davincis is excellent)

I mix all of this together and roll into little balls. You can roll them in the almond meal, coconut, cocoa or just leave them plain

I then put them in the freezer for about 15 minutes
YUMMY!!!

I don't know if this is "the" popper recipe, but this one is very tasty!

Get the largest jala's you can find . At the top, just below the stem line, make a cut parallel to the stem line and perpendicular to the upright stem. Make it about 3/4 deep so that you can sort of "peel back the lid" but not break it off. Now make a cut from top to tip. Take a small spoon (a toddler's spoon works perfectly for this!) and scoop out seeds and veins. Discard those. Now use that same little spoon to stuff it full of cream cheese. Take a slice of bacon, preferably thick cut, pepper crusted, and wrap it around the popper. Secure with a toothspick through the bacon wrapped pepper. Place in an oven safe dish and bake at 450 for 45 mins. The stem helps to keep them upright as you can usually sort of "hook" the stem over the lip of the dish you sit them in. You want them upright while cooking. If they fall down, the bacon wrapping won't get crispy. Interestingly enough, this method of cooking makes the pepper taste a lot milder than when they are raw, and not sharp like when they are pickled. My sister generally doesn't do super hot food, but she loves the smokiness of these. The smoky pepper with a little heat, the cream cheese and the crispy bacon just make these things delicious!

I have been cooking about a half lb of hamburger and mixing it with about 2 tbs sour cream for lunch all week. Very filling and I am down about 2 lbs from last few weeks.

I have been toying with this idea all week: Shred some fresh cabbage, saute in olive oil or butter (maybe with some onion?), just enough whipping cream to coat, and voila. Has anyone tried anything like this?

I have been toying with the same kind of idea. The only difference I was thinking of whipping some cream cheese instead of cream. I may try this tomorrow.
