Super Delish! Macadamia Nut Crusted Tilapia
We need more fish in our diet and I am not much of a fish chef in spite
of the fact the DH is an avid fisherman all late spring and summer. Well I bought some wonderful looking tilapia at CostCo. It was so good I couldn't believe I cooked it. Macadamia Crusted Tilapia Pre-heat oven to 350 Get a large non-stick baking pan and place a nice big lump of butter in it along with 2-3 tbs. olive oil. Get the fat hot Get out three dishes, one for your crumbs, one for the beaten egg, and one for the crushed macadamia nuts. For crumbs I use a bag of plain pork rinds, onion and garlic powder, coarse black pepper, a dash of creole seasoning and put it all in the food processor and whirl until the crumbs are to your liking. Place it in a freezer bag and keep in freezer until you have use for it. Pat the fish dry with paper towels. Dip in egg, then crumbs, then macadamia nuts, keep it up until all is used up. By now your fat and your oven should be ready. Lay the fish in the pan, not touching each other and bake at 350 for 10 minutes and turn heat up to 400 degrees and cook another 10 minutes. We had this with our favorite slaw recipe and some greens from our garden. It is so good.

Sounds delicious Barbo! Did you turn the fish at all?
Does it brown on both sides? I'm not a pork rind fan, but I like whizzing up a Joseph's LC flatbread in the food processor to make bread crumbs, so I would probably sub that. I do love macadamia nuts! Thanks for the recipe! |

This sound wonderful Barbo. I'm very allergic to talapia. I eat alot of other wonderful fish as long as it is wild caught. Orange roughy,sea bass, striper, flounder, trout . i love fish.

Macadamia Nuts
They were small chunks. I think this recipe would work for any firm fish.
I did NOT turn the fish. It was just so good. I will be making this at least 2-3 times a month. Make certain that your fat is vey hot before putting the fish in the pan. |

ANY kind of fish is yummy with the macadamia nuts, IMHO!

Thanks for the clarification about cooking, Barbo.
I agree about nuts and fish, Charski. I use almonds along with LC bread crumbs and spices as a topping for baked haddock, and a local restaurant used to serve a pistachio-encrusted salmon with a tomato-basil compound butter that was amazing. I could probably use Barbo's method for the salmon, if I could figure out the butter. The older I get, the more I love fish! |

Been meaning to make this one - how do you crush the macadamia nuts? In the food processor? I don't have one - I have a blender, a coffee grinder that I use for flax, and a stand mixer with all kinds of attachments that my DH knows how to use.

Crushing nuts without a food processor.
I used to place them in a heavy paper sack.
Then start whacking them with the flat side of my meat tenderizer until they were they way I wanted them. My gosh that was a very long time ago. |

Only 5 months ago!
I had marked the thread because it looked yummy but I was on Induction at the time so nut free. Now that I'm eating more variety and have tilapia in the freezer it's a go! |
