p.s. Carolyn, you are the "inventor"! When you say "we" it is really YOU who invented this recipe. I'm giving credit where credit is deserved.
I am so grateful for your recipe. |

Thanks for reviving this thread!! I miss milk and usually buy a half gallon of skim milk when I have my son here. Now, I can make this as we need it and I can have it too. I plan to make it with half and half though as this is way cheaper than cream. I don't count my carbs and am not a fanatic at keeping things way low in carb count. So, a couple of grams here and a couple of grams there from using half and half vs cream doesn't make any difference to me.

FYI: for a great glass container with tight fitting lid: WalMart is currently selling both quart and half-gallon sizes. I make up a half-gallon at a time and find it lasts at least 7 days. Love this milk. I use the Organic Valley powdered organic milk -- it's not instant, so I first mix up the powder with about a cup of water and whisk it like crazy before adding all that to the big container with the other ingredients and the rest of the good water.

A picture of Carolyn's delicious milk.
I make this all the time Carolyn. It is the best. We have a local Dairy that sells milk in the old fashioned glass bottles. I bought 1/2 gallons and quarts and kept the bottles. I love my milk in these glass bottles in the fridge. It looks so pleasing. Last edited by shadowzip; 05-16-2009 at 07:16 PM.. |

I use half and half, too because I buy it more often. And, of course, you can use theskim milk as the "milk" part of this recipe instead of the dry milk.. ![]() Patti: For the container at Wallie, does it have a spout? Or is it a regular glass pitcher with a lid? |

I use the skim milk version and either the half and half or cream.

A couple of days ago I bought Nido, but did compare it to GV nonfat milk powder. Well, even though I bought the Nido, the GV had lower carbs in the serving size. The Nido size was 1/4 cup with 12 g of Carbs and the GV nonfat milk powder 1/3 cup for 12 grams. Go figure.

Yes, it has a spout. Not a tea kettle spout; like a glass cup spout. Works fine and the rubber stopper fits tightly enough so you can shake it up without it going every where.

Homemade Low Carb Milk
Carolyn... Your original recipe for milk is sitting in my fridge in a new large, mix and shake, Rubbermaid container I purchased at Walmart. How divine, to have great milk for cereal again! Thank you.... it is delicious!

FYI: Costco has a great deal on glass "jugs" with lids. For $19 you get 5 different sizes. They all look like the one at WalMart. I didn't buy the Costco ones because only needed the one I already have.

Ella5, I think CC is Carb Countdown. It used to be a brand you could find a few years ago, but I can't find it anymore since the nation has gone away from the low carb phase once again.

someone made the recipe with buttermilk powder and whey protein. Since I don't want to invest in yet another expensive protein powder, I was wondering if anyone had tried it with the buttermilk powder but not the whey protein.
I've not been a fan of buttermilk, but I also found the original recipe to be a little flat when I made it last. "dunno" Like it was lacking some crucial flavor that I couldn't divine just from tasting. I suppose I could try and tweak it myself, but I'm terrible at making stuff like this and I hate food failures.

Which recipe are you using now Metqa? I make a quart with 1/3 c. powdered milk, 1/3 c. half and half, 1 pkt. splenda, dash of salt and fill with water. If I wanted it richer I'd probably either switch to heavy cream or a T or 2 more milk powder. I don't drink much of it but DH drinks it every single day! And he's a country boy, lol.

Um, I think the last time I made it I used the original with Powdered Milk, and cream, since that's what I have, splenda and a pinch of salt. I'm a whole milk lover ( I don't drink milk hardly at all but when I do it has to be 2% or higher for my tastes) Maybe I'm just sentivie to the powder milk taste. I'm gonna buy a mini packet of fresh powder milk and try again, It might just be worth the trouble to keep buying CC when I need it.

Metga: I would just add more cream for the whole milk taste. Honestly, I can't even taste the non-fat powdered milk..Now, the stuff with the fat in it, is not good and methinks that the buttermilk stuff would be horrible..
You could always use regular milk instead of the powdered milk, dilute it with water, then add cream, salt, and Splenda. |

I also never drink it unless it's cooled in the fridge at least overnight. I don't like it right after it's made but after it sits it's good. I like it much, much better than CC for sure. Good luck to you.
