Akoho sy Voanio (Chicken in coconut milk)

I tried a new dish today that is from Africa! I am a huge fan of ethnic cuisines. My sister sent me the recipe. This turned out really good and it was super easy to make. THAT being said..... I prefer for food to pack a punch in my tastebuds with multiple spices so I added a few extra ingredients and it became a YUMMO Yummo meal!! I will post the recipe then in [COLOR="Red"]RED[/COLOR] [COLOR="Black"]I will add my tidbits!![/COLOR]


Akoho sy Voanio (Chicken in coconut milk)

1 chicken cut into bite sized pieces[COLOR="Red"](I used chicken tenders)[/COLOR]
juice of one lemon
1 tsp grated lemon rind (zest)
salt (to taste)
pepper (to taste)
cayenne or red pepper (to taste)
oil for frying
2 chopped onions
2 minced cloves of garlic
2 tomatoes chopped
2 tsp ground ginger or 1 tsp fresh minced ginger
1 cup coconut milk
[COLOR="Red"]couple teaspoons of curry powder
Dash or two cinnamon
Broccoli florets[/COLOR]

In a glass dish, marinate the chicken in lemon juice, lemon rind, salt, black pepper & cayenne pepper for about an hour. Heat oil in dutch oven or covered pot. Saute onion and garlic for a few min. Add chicken and continue to cook until chicken is nearly done. Reduce heat. Add tomatoes and ginger and stir for a few min. Add coconut milk and simmer over low heat till chicken is fully cooked and sauce is thickened. Stir often.[COLOR="Red"] Here is where I tasted it & decided to add the curry, cinnamon & broccoli)[/COLOR] You can serve this over rice. (Of course I omitted the rice) [COLOR="Red"] I also garnished with a Tbsp. or so chopped cilantro.[/COLOR]

Takes maybe 15 minutes to cook until sauce is thick enough.

I make something similar to this and serve it over caulirice. It's wonderful.

That sounds good Julie! Thanks for sharing. I made a curried chicken with coconut milk before but it didn't have tomatoes in it.
