This is the top of the pizza! BETTER than Godfather's Taco Pizza.



The Zucchini Crust has a very mild flavor, and is perfect for a taco pizza!



This pizza is awesome!

Thank you guys! I was dying for a taco pizza tonight, but cauliflower can be too too, especially with Mexican food. You want a more mellow crust.

I shredded an entire large zucchini (post-peeling), mixed with 2 eggs and 2 cups of pre-shredded pizza cheese.

I baked the crust at 450 degrees on a greased pizza pan for 12 minutes. Then I removed the pan and added the following (in the following order):

Pizza sauce mixed with Pace Picante Salsa
Seasoned ground beef
Shredded lettuce
Shredded cheddar (you can also add mozzarella and/or colby jack)
Chopped Tomato
Red Onion
Sliced Black Olives

You could also top with guacamole and sour cream if you'd like.

Don't put it back in the oven!!! Serve it fresh.


Oh-- and this pizza is fine for induction!

I don't have the finalized recipe with the nutritional values yet, though. I *just* made this a few minutes ago!

Can't wait to try this. My family LOVED the cauliflower pizza crust. DH is diabetic and has been yearning for a pizza recipe. This hit the spot. "When are you making this again?" Guess it will have to be a once a week thing.

swinglow-- I like both crusts a lot! I think that both will complement different sauces and toppings.

If you want a mellow flavor, you want the zucchini. If you want pungent, you definitely want the cauliflower. I don't know if I can choose yet. I need to eat more pizza!

The zucchini was really easy to prep. Just peel, grate and mix with the eggs and cheese. But it is a little more expensive, because one zucchini makes a pizza. A bag of cauliflower makes 1.5 large pizzas.

I didn't even measure. I'd guess there were probably (don't quote me) 1.5 cups? I could be wrong, though. I'd say one of your large zucchinis to 2 eggs, 2 cups of cheese (as I did).

It seems to just work out well! If you measure, let me know what you got.
