I'm planning on pizzas later this week. I'm gonna make both the cauliflower and the zucchini one. I might even try the zucchini type with calabasa squash - that's what they call them here, green like zucchini, but lighter and milder in taste. I'll post results after.

Excellent Cleo!! We made the zucchini crust and topped like a regular pizza! Can't wait for tomorrow to get here so we can have pizza for lunch again!

Oh YUM.... I can't wait for spring and summer now! There is a farmers market right up the street from our house, and they sell zucchini for an awesome price! I might have to break down and get some at the grocery store though!

OK, I didn;t have any Zuchini and I was out of a couple things called for so I made this with the cauli crust. I didn;t have any salsa or picante (DH and LO ate it all) so I mixed Rotel w/chilis in with my sauce instead. I also used 1 and half cups motz and half a cup cheddar for the crust cause that was all the motz I had left. I did bake it again with the sauce w/rotel and cheddar cheese and taco seasoned ground meat & onions on it then took it out and topped with lettuce and sour cream. WOW it was GOOD!!!!!! Thanks Cleo for another wonderful recipe!

I made this today. It was delicious!

After I cooked the crust I cut it in half then used a spatulat to flip it over, then cooked for a bit longer. Worked perfectly.

Yes, flipping it was a great idea.

I did use some of the zucchini crust for a regular pizza too. I love it!
