Are you adding an additional egg to the ricotta or instead of adding it to the cauliflower/mozarella?

TX-- They're adding extra egg to the ricotta to extend the ricotta.

I made a huge 9x13 pan of this lazagna.. I decided to do the whole bag of cauliflower,I did not know it would make so much.. I justed added 1 pound of cooked ground beef and mushrooms and one layer of turkey pepperoni . I made this up this morning while getting ready for worked,, baked it for an hour while showering, etc.. Put some in a bowl for my dinner as I am at work till 9pm,, and let me tell you it was "GREAT".. I wish I had brought more with me it was so good.. I am so glad I made so much as I will be eating it for the whole weekend, hubby just called and he too said it was great and wanted toknow what was in it. ha.Thank you so much for this recipe. It is a keeper.

Well I had the your wonderful lasagna again tonight (I used an oospie for garlic toast...brushed olive oil then added garlic, shredded cheese, and toasted in the toaster oven) Bravo!

baby-- I think I liked the lasagna better the second day than the first. That's how much like lasagna it really is. I am so glad you like it, too!

So I made the lasagna and it was great! I'm excited about it...I have to not eat it all.....I also made mashed cauli and bbq baked beans with soy beans, lc bbq and chopped bacon.
Dinner was great tonight! |

I added the extra egg also to the ricotta mix. I have all my life. It makes the ricotta very smooth and extends it. This is very wonderful.

I usually use cottage cheese mixed with parmesan instead of ricotta. this time around, I went for the r. I appreciate the egg tip! I seriously didn't know so many mix egg with the ricotta!

I made the lasagna and oopsie rolls for the first time last night. I can't believe that I do not miss the noodles one tiny bit. Amazing! I don't think I added enough cauliflower though. Since I doubled the recipe, I weighed 10oz of fresh cauliflower first, cooked it, let drain and cool. I didn't have enough to make solid layers even after adding an egg. Oh well, no biggie

I used a bread pan, and those are only about 3-4" wide at best. It's easier to spread out cauli over that small a surface. I sprinkle and press.
I am so glad you didn't miss the noodles! I love lasagna, and I've always been someone who made my noodles from scratch in my kitchen (rolled them out, kneaded them, etc), and am ok with not having noodles. I just hated always feeling hungry because of the high-carb noodles. It's nice to be able to eat something and feel satisfied by decadence, and not by scrambled eggs (like the last time I did Atkins).

This is in the oven now.
I screwed on the layers so hope it still works (my fault). While I doubled the recipe I think my pan was too big... I will try the bread loaf pan next time. If I double the recipe can I still use the bread loaf pan? |

I used two bread loaf pans for my double recipe. If you're using just the basic recipe (no toppings) I bet it could all fit in one standard size loaf pan. My loaf pans are a little smaller than what is standard (4.5 x 8.5 x 3). If I didn't use ground beef I bet I could have put a double batch in one.

The Denver Post website loads quicker than Rocky Mountain News website, but I wouldn't classify either as slow.

I keep hearing locally that the site loads slowly. Maybe it's the altitude? It is sometimes really slow for me as well!

That could be! I am so not technical. It helps having other opinions, because I'm never sure if I'm just technologically numpty or if the site is slow--or my system is slow-- or my connection is slow.
No matter what, it all comes back to me = slow somewhere along the line. |

Load fast for me Cleo!! Looks great! Could be the time of day or your internet connection. I have High Speed Cable and it loads fast for me.
